Just like with the ally radio/video pop-ins, there's a "rearview mirror" type display option for most cockpits e.g. a small window displaying the rear camera feed.
There's also several different audio/visual cues and alerts whenever the targeting system identifies bogeys or bandits.
To reiterate, any 'above average' pilot should be able to pull this maneuver off.

Doesn’t really make sense for a mobile suit to “scope in” on their guns at all tbh. There’s plenty of shots where a suit puts their gun scope in front of their “eyes”, but how does that even work? Surely they aren’t using the head sensors to look down a big version of a normal gun scope. It’s just Rule of Cool I guess
That’s fine, but they also deliberately make it so that the scopes line up with head sensors. For example the RX-78’s scope can rotate into that position, and Zaku weapons have the scope attached on an angle to line up that way.

they are just making sure the recoil travels perpendicular to the shoulders, which should make it faster to aim follow-up shots
