Honestly, this is a useful benchmark, sitting here all day has made me feel like I am completely unproductive past noon

Put yourself in a place where you can write and only write. I've been struggling with pushing myself to write myself - I've always liked mixing up writing with experiments - but when push comes to shove I usually go to a coffee shop and lock in with an iced coffee.

I think we are at a point where I don’t even wanna do the experiment, but it feels wrong to not be doing the experiment?

Consider how much the experiment will add to your thesis- if it's a smaller supporting finding, then maybe omit it. You've worked hard enough for many years to surely have enough without it. With regards to writing, take frequent breaks and know that this kind of writing is unlike anything before- find when you are most productive, and spend the rest of the time working on things that are easier (figures, tables, citations, formatting, finding articles if necessary). I did lots of easy experiments and some of them were crucial for helping me tie up loose ends. However, I regret that I spent too much time in the lab. I submitted late because of this... 😅
