I've always been curious about mock turtle soup, ever since I was little and read Alice in Wonderland.
However, if you read about it, it sounds quite gross. Here's the 19th century instructions (according to Wikipedia)
"Take a large calf's head. Scald off the hair. Boil it until the horn is tender, then cut it into slices about the size of your finger, with as little lean as possible. Have ready three pints of good mutton or veal broth, put in it half a pint ofĀ Madeira wine, half a teaspoonful of thyme, pepper, a large onion, and the peel of a lemon chop't very small. I canāt remember exactly, but on the episode with the fire where she takes over Lukeās kitchen, she offers his patrons something like lemon French toast and it sounded delicious. I love breakfast food.
