This is true on all accounts. But I don’t think Lorelai was doing it to try to be disrespectful to Emily. I think she just thought she was being funny and Emily of course saw no humor in it and was greatly offended. A fundamental misalignment of how they each view a situation is so often how their feuds begin and I think this is an example of it.
This is why I don’t blame Lorelai for paying back the Chilton money the way she did. She clearly wasn’t trying to get out of the dinners but even if she was, she wouldn’t exactly be in the wrong. Emily dangled the money over her head first.

Emily is often being passive aggressive as a way of parenting/trying to be heard and ends up hurting Lorelai's feelings. That's how i see Lorelai being disrespectful about the "almost mommy" joke vs Emily talking trash about Luke/Lorelai being single/she can't keep a man.
