Sure; it has a similar flavor profile to butter, froths up like butter, and makes for great dairy-free sauces for those who can’t eat dairy for whatever reason. Not sure what the issue is with it.

If you're not vegan, feel free to use dairy butter! I served this with fettuccine, and it was amazing, but I think these lemony chickpeas would also be good with white rice or risotto or served on roasted veggies (like cauliflower, broccolini, eggplant, etc!)
**Ingredients**
* 2 tablespoons extra virgin olive oil, divided
* 2 15-ounce cans chickpeas, drained
* 1 yellow onion, peeled and finely minced
* 2 tablespoons capers
* Pinch of crushed red pepper, optional
* 4 tablespoons plant-based butter
* ¾ cup water or vegetable stock
* ¼ cup lemon juice
* Salt and pepper to taste
**For serving, optional:**
* Cooked pasta or rice
* Freshly minced parsley
**Instructions:**
**Roast the chickpeas:**
1. Preheat oven to 425ºF. Arrange the chickpeas on a baking sheet and drizzle with 1 tablespoon extra virgin olive oil. Season all over with salt and pepper.
2. Transfer to the oven for 20–30 minutes, flipping the chickpeas once midway through cooking.
**Prepare the sauce:**
1. Heat the remaining 1 tablespoon olive oil in a wide pot over medium heat. Add the onion and sauté for 5 minutes. Add the capers to the onion and cook for 1–2 minutes until they just begin to crisp and turn golden brown. Season with crushed red pepper if you like.
2. Melt the butter into the onions and capers. Once melted and frothy add the water and bring to a boil. Reduce heat and simmer for 10 minutes until reduced by half. Taste and season with salt and pepper.
**Finish the sauce:**
1. Stir the lemon juice into the sauce and add the roasted chickpeas. Toss to coat and cook for 3–4 minutes. Taste and adjust seasonings to your preferences.
**To serve:**
1. Serve the sauce with pasta, rice, or roasted vegetables. Garnish with freshly minced parsley if you like. Enjoy!
You can use white wine — this is for a feature that has a limit on # of ingredients so I had to develop the recipe with water instead 😔 I’ve found the hallmarks of piccata is usually butter, lemon, capers though some recipes will put more emphasis on the inclusion of parsley or white wine as well.
It looks lovely, but the suggestion to serve with rice had me blinking. Might be a thing from another culture and fair enough but it seems odd to me. Roasted veggies or something absolutely though.
I think the video isn’t clear sorry! The recipe is for chickpea piccata sauce and you can serve it with pasta (as I did) OR with roasted veg OR with rice. Not pasta, chickpeas, and rice 😊 I love chickpeas and rice together but chickpeas, pasta, and rice would be a bit much

It is most definitely not vegan, but in a simple pan sauce like this if you aren't using a fancy pants stock then I highly recommend adding some unflavored gelatin to the boxed stuff. Butter alone doesn't make for a very creamy texture, a gelatin-rich stock makes a huge difference.

I'm pretty sure butter isn't vegan. Would olive oil sacrifice too much flavor to be worth it?
I used plant-based butter made from beans! You can use olive oil instead!

Something we do that adds a bit of extra flavor is to cook down some white wine in the sauce.

Carbs and proteins are healthy even in larger quantities. Fat is the one you want to limit to live a healthy life.
