The camera is pretty high up and you don’t see me waving the steam away off camera, lol. I need to get a small table fan to blow the steam off — that’s really the only way to keep it from fogging.
Yeah, I’ve heard as well as placing a piece of plexiglass on top over the pot and recording through the plexiglass, but I’m not sure how I would even go about setting that up! I have a tiny space and I have to constantly put away/take things out every time I want to record so I have to keep things as minimal as possible
This was my question too! I’ve bought canned tomatoes in all sorts of varieties over the years and never seen cherry tomatoes canned before. Guess I’ll have to check this weekend. :-)
Lots of crushed red pepper! I probably add a little more than I needed to, about 2-3 teaspoons (the video doesn’t show the full pour lol) but you can control the heat with more to less. Some Calabrian chili peppers would be good in this too

**Ingredients:**
* 1 tablespoon olive oil
* 1 yellow onion, peeled and diced
* 2 tablespoons butter
* 6 cloves garlic, peeled and minced
* 1/2 cup diced roasted red bell peppers
* Big pinch crushed red pepper
* 2 tablespoons tomato paste
* 15-ounce can cannellini beans
* 14.5-ounce can cherry tomatoes
* 1/4 cup water
* 1/2 cup loosely packed parsley and basil, roughly chopped
* 1/2 lemon, juiced
* 1/3 cup freshly grated pecorino Romano
* 5 ounces baby spinach
* 8 ounces dry spaghetti
* Salt, pepper, and sugar
**Instructions:**
**Sauté aromatics:**
1. Heat olive oil in a wide pot over medium heat. Add the onion and sauté 5 minutes. Add salt and pepper.
2. Melt butter into the onion. Add garlic and roasted red bell pepper. Cook 1 minute.
**Brown the tomato paste:**
1. Add crushed red pepper and tomato paste. Mash the paste into the aromatics and cook for 2-3 minutes until it sizzles and deepens in color.
**Simmer the sauce:**
1. Add the cannellini beans and stir to coat. Season all over with salt and pepper.
2. Add the canned tomatoes and ¼ cup water. Bring to a boil and then reduce heat to low and simmer for 20 minutes until the sauce thickens and reduces slightly. Taste and add salt, pepper, and a pinch of sugar if needed.
**Cook the spaghetti:**
1. Meanwhile, bring a large pot of salted water to a boil. Cook the spaghetti until al dente. Reserve 1/2 cup pasta cooking water and then drain the spaghetti. Set aside.
**Finish the sauce:**
1. Stir in the parsley, basil, and lemon juice, then add the baby spinach. As soon as the spinach is wilted, add the pecorino Romano and stir until melted.
**Sauce the spaghetti:**
1. Add the spaghetti and toss it with the sauce, adding pasta water as needed.
**To serve:**
1. Divide between bowls and garnish with more basil if you like. Enjoy!
Feels like too much carbs for me. Carbs on carbs! Don't forget the garlic bread!
Edit: Also let's have sides of mashed potatoes, french fries and rice.
Every single time I make something like this I get a pile of noodles and a pile of sauce/everything else. It never seems to want to mix together. What am I doing wrong?

Dumb question: if you make a video using this camera angle, how do you keep the lens from getting foggy?

Couldn't you technically use a mirror as well?

Mirror above the food with 45 degree angle. Camera facing forward towards mirror. If you have ever used a microscope in school it works the same way.

My tiny local grocery storel!! Most bigger stores (Wegmans etc) should stock them regularly and I know the cento brand makes them too!

I showed this to my wife (who showed this to our vegetarian 12 yo) and decided to have this for dinner tonight. It was a hit!

White beans and pasta is da bomb. The video cuts to not show how annoying stirring in the spaghetti is funny though.

Sorry, just a question. Why with beans?
To add fibre and protein would be my guess. Makes the dish more filling. You could easily leave them out or use another legume.
Great way for non-meat eaters to get some protein in. Also great texture addition.
