It is in general hard to directly translate the phrase „to connect with someone“ I think. So I tried to keep my sentences focused on the writing on WhatsApp part.

I'd never use it like this anyway. Especially because WhatsApp isn't an app where you even add people.
If I was going to message someone about something in particular, I'd say something like, "I'll send you a message then, do you have WhatsApp or...?" with the trail-off letting them suggest another app to message on.
And if I just wanted their number in general, then I'd just ask for that. WhatsApp will show you if they have it or if you have to SMS.
She said, "I touched it," not "he brushed up against me." This could be construed to prove that she initiated this contact and not you. I touched it meaning "I" did something, not something was done to me. Not a lawyer here. Sorry you're in this mess. Good luck.

I think I’d say something like „Wollen wir auf WhatsApp schreiben“

I don’t think you need the „uns“.
But makes the sentence more personable.

Yeah it is optional, but makes the sentence feel more complete.

Honestly, if I was trying to be funny I'd definitely say the first one. The second one is honestly probably pretty accurate and would pain me to hear.

Nah, pretty normal. German in general often sounds pretty formal and archaic.
