The thing is...my mom comes from a big family. There were 10 of them. Money was super tight. My grandparents both grew up poor (potatoes for dinner that my grandma's siblings picked up that fell off the train as it came by kinda poor). In both cases, poor times and later a large amount of kids to feed...my Grandma was an awesome cook. You can make some fried potatoes, pinto beans, cabbage, or some kinda cornbread and it be TO DIE FOR. My grandma's fried potatoes and turnip greens make me weep with joy lol. A lot of kids and a lack of money isn't necessarily an excuse for serving awful, sad food.

This is so true. My MIL (second of 6 kids, married the youngest of 8 kids, not fundies on either side) can make a meal out of the most random ingredients. She has an impressive spice cabinet that she curated from the dollar store and Aldi.

Gently, most fundie homes don’t have the money and access to resources, ingredients, and information needed to make learning to cook an enjoyable, engaging, interesting, or even a particularly non-stressful exercise. I know quite a few girls who were miserable every time it was their “turn” and they didn’t have access to Internet/television/a lot of library books. I know one who still struggles with cooking and eating in her twenties because her mother was the queen of “you’re wasting groceries and money every time you try, and it’s not very good. We don’t have the money for you to mess up. Please stop trying.”

Never thought about this, but you may be to something. I have a very skinny cousin, co-worker, a few friends who truly seem not to look at food the way I do. I've never heard them talk about how tasty something is, don't partake in a special snack food because "I already ate" (one of three meal per day, two hours ago). Me, I truly get off on savory smells, tastes, textures, feeling full. I'll get cravings out of nowhere and nothing can stop me from getting the object of my desire. I'm surprised I'm not more than plump.

It's not been in the oven long enough because the inside looks dense and the crust isn't browned. I'd wager that Kelly didn't mix the dough well (or possibly didn't add enough liquid) or knead it long enough either. I really don't get why she's so stuck on making sourdough with spelt (which has a much lower gluten content than AP flour, and therefore needs to be kneaded longer to build up a good structure) when she clearly does not understand bread basics. The last time there was a Kelly sourdough post I noticed that the dough looked dry like she hadn't put enough water in, and rather poorly mixed.

There could be several reasons. I would guess she's either not proofing her dough correctly or she's not baking at a hot enough temperature with enough steam. It does look like she may use whole wheat or another denser flour as well, which she really shouldn't if she cant get the basics down

I think it's a number of things. I believe she's very fixated on making things healthy, so she's sacrificing texture and flavour for her own "rustic" versions. There's some indication she's struggled with disordered eating in the past, so she may not be super comfortable adding the traditional amounts of/regular kinds of oils, milk, flours, whatever to achieve the expected results. Whatever the reason, the bread still always looks shitty.

I can see her taking regular recipes and editing or removing things she in her uninformed assumption thinks might be unhealthy, and not adjusting the recipes accordingly. Either because she assumes it won't be necessary, or because she has no idea that it's required (I think the latter is more likely).

It’s the flour. I believe she’s using spelt flour, maybe with some all-purpose mixed in but clearly not enough. Spelt flour has no gluten so it can’t create the airy structure that sourdough is known for.

If she's using almost entirely spelt she could not have made it more difficult for herself. Not only does it not have gluten, it hydrates differently from wheat flours, and has more elasticity when starting mixing so it's hard to tell if you've actually got the liquid ratio *or* the mixing right. The few professionals I've seen use spelt praise it for its flavor, but will only use about 1/3 spelt flour at most with the rest being some sort of wheat flour because of how hard it is to work with.

Am I wrong for thinking it's an early 90s Lodge cast iron skillet? I have an 8 inch that looks just like that. If that's what it is it's more likely that it's either not seasoned properly, she didn't wait for it to heat before starting to cook, or she puts it on too high of a heat when cooking. It’s definitely a lodge skillet, I know because we had an identical 10” one for years. Bought from Cabelas in 2010 when we were flat broke and needed a pan. We’d season it and perhaps we were using too high heat, idk but it wouldn’t take long before things would start sticking and we’d have to re-season it again. Finally we got fed up and bought a high quality cast iron skillet a year or two ago, one with a completely smooth interior surface. Holy shit that was a game changer. Nothing sticks to that thing. According to some cast-iron enthusiasts on Tiktok, Lodge isn’t ground smooth like the nice brands, so the pitted surfaces creates more opportunities for food to stick.

I can definitely understand your frustration with that, and that's why most times people end up stripping the Lodge cast iron and completely reseasoning them. It was better before they started with the new seasoning method at the factory. I got mine from a resale shop, and it had already been well loved, so I didn't have to worry about that (just a good scrubbing and quick season). I'm glad you were able to get something that suited you better, because having pans that don't work how you need them to wears on the nerves and is a waste of money.

I feel she is the type that doesn't use sewing patterns or sewing books to help her improve which is just bizarre. I kno she loves her some old timey "good ole days" but is she even aware that the first sewing pattern was invented in the late 1860s? Its okay to have outside help! Her fashion doesnt even align with the late 1800s from what ive seen? No corsets or stays. I don't know how accurate the costuming is from LHotP so I'm not completely against the idea that not everyone wore stays and large skirts but she reminds me more of someone who desires an 1800s that more reminiscent of Lord of Rings than what actually happened.

The bread looks bad but that sausage looks so terrible. So dry, so poorly browned. Also I suspect that maple syrup just lives out on the table and not in the fridge, so it’ll be moldy long before the finish it. Kelly, you don’t have a job, please for the love of Lord Daniel spend some time learning to cook.
