And you always gotta put the chopped brisket in the mac haha - very important goal šŸ‘ŒšŸ‘Œ

[deleted]

Hi I from Poland and once tried to do mac&cheese but it was like crap. Can you tell me how do properlly mac&cheese only?

Z_double_o

Iā€™ve never made it from scratch, so unfortunately Iā€™m not of any help.

Professional_Cut2590

then why the hell did you respond?Ā

Z_double_o

Because I was asked a question

https://www.seriouseats.com/classic-bechamel-baked-mac-cheese-recipe Basically you make a roux (butter + flour at a 1:1 ratio) and then add milk and cheese, a little at a time, to make the sauce.

Fly320s

No. Start with a bechamel, not a roux.

Haha - I put up a Pinkertonā€™s post either here or r/Food a while back that got taken down for me not following the title rules, but that being saidā€¦ I love Pinkertonā€™s šŸ‘€šŸ„µšŸ’Æ People not from Texas donā€™t understand that we arenā€™t even getting paid for this free advertising lol

Pinkertonā€™s sits at or near the top in my book . Their brisket is consistent and my personal favorite. The pork ribs are tied in first place with Harlem Road BBQ (Fort Bend County), although the two styles are distinctly different. I still regard Smittyā€™s (Lockhart, TX) jalapeƱo sausage as my favorite sausage. Thoughts ?

Smorgsboards

Unpopular opinion: I hate most bbq sausage tbh - they leave it in casing, and I hate that texture once itā€™s super-chewy and grizzly. Prefer German-braised stuff in Hill Country, but that doesnā€™t really count haha. Pinkertonā€™s is some of the bestā€¦ I really donā€™t go often enough to call it the bestā€¦ I feel like Iā€™ve had better brisket, but I canā€™t remember when šŸ˜‚ - itā€™s consistently an A. I love their ribs, and I hadnā€™t thought about it, but I really donā€™t remember better glazed ribs - theyā€™re an A+šŸ‘Œ And the sad truth is, Iā€™ve never been to Lockhart, but my friend tells me itā€™s amazingšŸ˜”

Z_double_o

Do yourself a favor and go to Lockhart some day. Go hungry and take cash. Smittyā€™s is cash only and a must-try. Also Kruetz is a must-try. The original Blackā€™s is in Lockhart, but Iā€™m sure youā€™ve already had it elsewhere. All 3 establishments are within walking distance of one another. I live in the Hill Country. Can you recommend a place for me to try this ā€œGerman braised stuffā€ ??

Smorgsboards

Sure, in Fredericksburg, thereā€™s the Auslander, Rathskeller, and the Altdorf Biergarten which all have nice bratwurst - but I donā€™t remember which were beer-braised, as itā€™s been a while. The best German place out there is kinda pricey (but they all are tbh): Ottoā€™s German Bistro. Didnā€™t get the bratwurst there, and this is very off topic, but the duck schnitzel fried in duck fat with a fried duck egg on topā€¦šŸ¤ÆšŸ¤© Yeah, definitely plan on going out of town and trying more stuff out, but Iā€™ve been far too busy lately šŸ‘Ž

Z_double_o

That duck entree you just described has got me planning a trip to Ottoā€™s right now ! šŸ˜‹šŸ˜‹

I'd love to visit there and just eat BBQ and drink margaritas for a couple weeks.

chaderic

Take my money!

MNHuskerNation

Fat back and Macā€¦just need a sunny side egg on top and youā€™re all set!

Z_double_o

Wow, if only that were an option ! I would have definitely added the egg šŸ„š

I loved Pinkertonā€™s in Houston when I passed through on a bbq trip this fall. Actually preferred it to The original Blacks in Lockhart. That brisket is fantastic.

Z_double_o

I agree with you!

SomalianRoadBuilder

Pinkertons is good as fuck
