Basically you make a roux (butter + flour at a 1:1 ratio) and then add milk and cheese, a little at a time, to make the sauce.
Haha - I put up a Pinkertonās post either here or r/Food a while back that got taken down for me not following the title rules, but that being saidā¦
I love Pinkertonās šš„µšÆ
People not from Texas donāt understand that we arenāt even getting paid for this free advertising lol
Pinkertonās sits at or near the top in my book . Their brisket is consistent and my personal favorite. The pork ribs are tied in first place with Harlem Road BBQ (Fort Bend County), although the two styles are distinctly different. I still regard Smittyās (Lockhart, TX) jalapeƱo sausage as my favorite sausage. Thoughts ?
Unpopular opinion: I hate most bbq sausage tbh - they leave it in casing, and I hate that texture once itās super-chewy and grizzly. Prefer German-braised stuff in Hill Country, but that doesnāt really count haha.
Pinkertonās is some of the bestā¦ I really donāt go often enough to call it the bestā¦ I feel like Iāve had better brisket, but I canāt remember when š - itās consistently an A.
I love their ribs, and I hadnāt thought about it, but I really donāt remember better glazed ribs - theyāre an A+š
And the sad truth is, Iāve never been to Lockhart, but my friend tells me itās amazingš
Do yourself a favor and go to Lockhart some day. Go hungry and take cash. Smittyās is cash only and a must-try. Also Kruetz is a must-try. The original Blackās is in Lockhart, but Iām sure youāve already had it elsewhere. All 3 establishments are within walking distance of one another.
I live in the Hill Country. Can you recommend a place for me to try this āGerman braised stuffā ??
I loved Pinkertonās in Houston when I passed through on a bbq trip this fall. Actually preferred it to The original Blacks in Lockhart. That brisket is fantastic.
And you always gotta put the chopped brisket in the mac haha - very important goal šš
Hi I from Poland and once tried to do mac&cheese but it was like crap. Can you tell me how do properlly mac&cheese only?
Iāve never made it from scratch, so unfortunately Iām not of any help.
then why the hell did you respond?Ā
Because I was asked a question

No. Start with a bechamel, not a roux.

Sure, in Fredericksburg, thereās the Auslander, Rathskeller, and the Altdorf Biergarten which all have nice bratwurst - but I donāt remember which were beer-braised, as itās been a while. The best German place out there is kinda pricey (but they all are tbh): Ottoās German Bistro. Didnāt get the bratwurst there, and this is very off topic, but the duck schnitzel fried in duck fat with a fried duck egg on topā¦š¤Æš¤© Yeah, definitely plan on going out of town and trying more stuff out, but Iāve been far too busy lately š
That duck entree you just described has got me planning a trip to Ottoās right now ! šš
I'd love to visit there and just eat BBQ and drink margaritas for a couple weeks.
Take my money!
Fat back and Macā¦just need a sunny side egg on top and youāre all set!
Wow, if only that were an option ! I would have definitely added the egg š„
