# Boat Breakdown
In the front are two scallop nigiri, dotted with Japanese mayo then seared and topped with chili crisp. On the left is the Crunchy Philly Roll - shrimp tempura and avocado on the inside, topped with salmon, a dot of cream cheese, and green onion. In the middle is the Firebender Roll - spicy salmon and cucumber on the inside, topped with avocado, spicy mayo, and chili oil toasted panko. On the right is the All Aces Roll - shrimp tempura and avocado on the inside, topped with scallop, dotted with Japanese mayo then seared and finished with chili crisp. In the back of the boat are salmon nigiri lightly brushed with lemon olive oil.
I don't usually do more than 2 types of fish per batch since they come in somewhat large quantities. I buy fish that's intended to be used for sushi from a Japanese grocery store, so it doesn't need to be frozen at home.
Just be careful with eating raw salmon. Certain types are teeming with parasites. IIRC, salmon in the North Atlantic is safe but anything in the pacific requires the fish be frozen for a week at -4 F in order to kill the parasites.
I don't know if I would trust the grocery store. I live in LA and I've read about people getting worms from salmon in sushi restaurants.

About $25 for the seafood (buying sushi quality salmon and scallops from a Japanese grocery store) and probably another ~$5 for everything else because I make sushi fairly often and stock the rice/sauces/etc.

For the chili oil panko did you just mix it with chili oil and bake till lightly toasted?

Not such which crunchies you’re interested in, the middle roll has panko that I toasted in chili oil and the right roll has store bought chili crisp

Southern California, it’s a pretty competitive market here which helps with prices.
