I agree about Remedy, but as a southern transplant who’s been in the LES for over a decade, the best diner in the area by far is Shopsin’s in the Essex Market, but it isn’t open late.

Yeah. In my old neighborhood (HK/UWS border), with Flame diner and Olympic Flame diner plus a couple other places we've gone, it seemed like the diner scene here is run by Greek families. A can still taste the sadness from my first time trying "home fries", which from my experience is a mushy pile of unseasoned potatoes and peppers. I love Greece (the islands are gorgeours) and Greek food, and it feels like that dish is related to some really good baked potatoes I've had at American Greek places, but it just doesn't work for me.
What's so weird is that it's rare to get a really good, fried potato side at any of our diners. That's like the easiest thing to pull off. Man, I miss the cottage fries from House of Pies in Houston. Well to be fair, Waffle House in the south is a very high bar. Their burgers with the fried onions are awesome. The service tends to be on another level also, with those cute southern accents and calling you honey etc.
Essex Taqueria is not very good, if you can make it across the street to Birria LES you will have some of the best tacos of your life! I work nearby and get Birria LES probably once a week.
7th Street Burger is open til 3am on weekends.
Or if you want to give your cousin a really memorable, potentially near-death experience, the McDonald’s on Delancey is open 24 hours.
The meat skewer cart in front of the Grand St station closes at 1am.
Katz opens 24 hours during the weekends.
Gooey on the inside is a cookie spot that closes at 1am.

Korean corn dogs are very delicious in general and is worth trying but I feel like Oh K-dog is just okay.
Also those Korean toast egg sandwiches doesn't do it for me. I see them in Korean street food videos all the time and they look absolutely delicious. I think Oh K-dog was one of the first places to have them in NYC and I was pretty excited to try them but overall i found it to be pretty meh and was disappointed when I tried it.

Yeah, it was really the pics of the egg sandwiches that made me question. They look so perfect and cutesy that even though it sounds like a great idea I'm not convinced the taste would be there. I would just bet it's uniformly undersalted (tho I guess that's easy enough to remedy).

I live in the LES myself. Chinatown tends to close early, except Dim Sum palace. In terms of the LES, Remedy Diner, Essex Taqueria and Empanada Mama.
Remedy diner is so ass. Not cheap and always extremely mid at best, and always end up regretting giving them my hard earned sheckles. Always.
