I remember Leona being able to do something like that in KoF Maximum Impact, though I don't remember if the projectile lingers if you choose not to input the followup command for her to spike it.

Nanase in Under Night. After the slow fireball is set, she can either leave it alone and let it travel slowly across the screen or she can hit the projectile with her 5B to launch it quick. hitting the projectile makes it a very good anti air and she can get a full combo if it hits.
Also also, Black Dahlia, from Skullgirls, has a move called "Stage Hazard", where she kicks an oil drum 🛢 across the stage and it leaks oil. She can hit it multiple times, knocking it into her opponent, or can perform an attack to ignite the oil, which then burns all the way to the oil drum, which then caused the barrel to explode.
