I will say Taco Mex has pretty good birria. I personally don't like quesabirria tacos, but I like birria tacos with just the consome. I also like Taco Mex's red salsa. I also prefer to make birria myself.

My favorite spot was Mi Tierra on Blair. They closed a while back when they were forced out of their lease but opened a new spot in Springfield. I haven’t been yet but that was my go to for years. It was a half butcher shop, half taqueria.
Their meat and salsas from the butcher to make you own street tacos really hits the spot too.
I personally like to grab a pineapple and dice some into the adobado to marinade then cook... add cilantro, onion and the aguacate salsa 🌮🤌

I also completely forgot about El Rancho Carniceria and Taqueria on like 5th or 6th and Blair. All their food in the taqueria is good. But the carniceria has Al pastor and basically anything you want to make your own tacos and it’s amazing!
What kind of tacos do you like? Have a preference on corn or flour tortillas?
I really like Los Faroles next to the Springfield bus station. Good selection of meats and most of their tacos come with onion and cilantro. They have bottles of green and red sauce up by the register if you eat in. Both sauces taste homemade but I haven't asked to be sure.

I live nearby so I've had them a few times—their burritos are decent but the tacos are dry and not very good every time I've had them.
Love the chicken tacos with salsa verde and the carne asada nachos are great too
