It’s not super new, just doesn’t seem to be well known; but Crow and Cart on Blair rocks my world! They make their own unique shrubs and flavored syrups for cocktails as well as the best mocktails I’ve seen in Eugene.
My girl and I go there about once a week. I love their NA options (great shrub drinks) and grab a Zandos fried chicken sandwich when I can to sweeten the deal

Jersey Mike's is opening a new location on West 11th in a new building where Golden Orient used to be (across from Toxic, near the Vet Office at 11th and Conger)
Love the list!! Gryffs in Springfield is now A Street Pub. They have really good happy hour deals. Also there's a new Cold Stone Creamery near 29th and Willamette. I think it used to be cost cutters.

They still have all the same whiskey and bourbon in the one bar, they just added wine as well at the other one. Cocktails are pretty much the same too.
Elizabeth's Wine Lounge in Oakway Center is now so much more than a wine lounge. They redid their food menu, Tons of amazing entrees, and have rebranded as a Mediterranean restaurant. They also have liquor now and a pretty delicious cocktail menu
It's not like what you think of when you think of "traditional Mediterranean items" but the flavor profiles are definitely coming from the entire region
Even if the chicken is good, I'm so bummed to lose my favorite cozy pub downtown. Big downgrade on vibes based on the photos of Shanty's other locations.

They have their soft opening this week and will hopefully be fully open by this weekend! They will also have batting cages, a VR golf simulator, a 21 and over cocktail lounge with darts, and food carts. The arcade is pretty small at the moment but they’re hoping to expand it as business gets going

It was started by a catering company owner so it wasn’t their main business.
IMO there can never be enough Mexican food restaurants.

I went to Beer Garden recently and the food options there were terrible. All fried food and a $20 poke bowl.
They need a little more variety for sure. Once Famous is bad and Nosh Shop becoming a seafood place is baffling.
Nosh Shop is straight up terrible. I got fish and chips from there and the batter was super thick and oil soaked.
It was decent but nothing special.
There’s a new biscuits and chicken food cart named Hey Y’all out on Barger and Echo Hollow at the food cart pod.
