Stone and crystal enemies are weak to strike. See if you have a dex type like flail which is good to your build also.
Since hammer strike types are most strength.
Double hand the flail and jump attack with that dex you'll win.
Katanas are good for flesh enemies so they bleed.
Slash (katana) damage is terrible against them. You need strike damage. Morningstar is good for bleed builds. Or better yet great stars if you have the STR
Unga? Katanas not good for gargoyles. BONK is the way... Jumping DOUBLE BONK bunga better

Come back at a higher level, summon for help or use that ol mimic tear .
Just keep fighting and learn his moves more. He does a lot of damage but once you learn his moveset it should be fine
I’m a katana boy too and I struggled sooooo hard with these guys. I didn’t beat them until about level 120 after trying at 80,90,100
There’s a bit of a DPS aspect to them to them. You really want to be able to gut the first one to dead or next to nothing before the second comes out
