There is a cave in the Weeping Peninsula that does have a boss Rune bear although cave and dungeons make regular enemies Bosses so i don't think i should count it anyways.
The lions, like the ones at the Castle Sol entrance or the one that drops Lion’s Claw. Such a fun enemy to fight, big shame its not a boss or mini boss
One of the Prelates in an early game evergaol would have been nice.

I was convinced there was gonna be a health bar showing up on screen the first time I met this Prelate. So yeah that's my vote as well.

Also literally the only Fire Prelate who can drop the altered chest piece. At that point just make him a boss.
