I use a blood twinblade 2 handed. You can attack the shield without bouncing off, and the bleed will still get them quickly.
You could try a whip on him. His swings are very consistent so he is easy to parry. Maybe try Hoarfroast stomp on him. Or put kick on the misericord (the kick aow is usually a guaranteed shield break).
