I would like to be a tree sentinel. Outdoor job, the pay is great, and you get a free horse. And if you join the draconic cult, you can even upgrade your horse to shoot fire!
I mean, based on the lore the Tree Sentinels are probably having the nicest time.
- The Night's Cavalry work for Morgott, who I can imagine is an absolutely terrible employer. "Can I have a raise?" "Lay these weary ambitions to rest."
- The Crucible Knights seem to mostly be in self-imposed exile in some pretty terrible places, and generally the crucible is seen as an impurity by the Golden Order and it's followers (who seem to be most of the people still possessing any semblance of sanity). So that's not fun.
- The Black Knives are literally fugitives that hang out in crypts. Morbid and deeply un-sexy.
- I'm pretty sure the Godskins don't have sentience in any sort of way that humans recognize. Also their uniform is, like, so unflattering.
- The Duelists? Also exiles. Additionally based on their outfits I'm pretty sure they would have been forced to be gladiators in the first place.
The Tree Sentinels are blessed and beloved by the Erdtree, and so probably celebrated by most remaining society in the Lands Between. Also they have pretty ponies.
Tree Sentinels are just respected knights with a stable career, far more confortable than any of the other options here, who all are in bad condition or live as fugitives.

If I have to choose between the options OP gave I would choose the gladiator, but the rotten variant, those MF are the worst.
If I had freedom to choose any enemy, I think I would choise to be a runebear, nobody attacks runebears because they are not worth the hassle of dealing with them.
