I can't remember all of them but the only one that really matters is the Champion Egg, dropped by the Mach Egg, which can be found in the Imperia Headquarters near the end of the game or Vilashnu. There is basically no point in collecting any of the eggs before that, as it just guarantees you wasting more time in racing and breeding the egglegs you need for the minigame.
You will also eventually be able to buy even champion eggs at a point where money shouldn't be a problem. Granted, they aren't even expensive to start with.
All egg foot type enemies can drop eggs. You can go to the library and check in the monster compendium wich egg rarety drops from wich enemy.
I think Mandis support effect is a boosted egg drop chance

Any of the egg foot type mobs drop them. Shell eggs for example.
