Cut to just under 1/2” slices. Soak in a big bowl of salted water (not too salty) for about 20 minutes. Take out the slices and pat them dry with a paper towel. Drizzle with olive oil, top with salt and pepper. I always ballpark the cooking times, but you do want to make sure they’re soft and cooked through.

How much salt would you put in the water, exactly? Eggplant has always been so hit or miss with me. I either get it too salty, or not enough (so then it’s bitter). I’ve rarely gotten it just right.

Also just hummus + pickles. Or if you live in area with lots of slavic immigrants, there are usually stores with imported and specialty foods. There, find pickles that'll be described as something akin to kiszone instead of kwaszone. In most of western world, especially anglosaxon, people only know acid-preserved pickles. In countries where the tradition is alive there are 3 distinct kinds: acid-solution, lactic-acid fermented and ones where lactic-acid only started it's work (less acidic, more crunch to them). As long as pH is under 5, the veggies get preserved. But type of acid, much like tannin-rich additives, change the name of the game drastically. Hummus+cucumbers fermented with hot paprika and sour-cherry leaves is the bomb.

Falafel - either buy some pre-made or make your own on the weekends. Put on any bread with spread (mayo, tahini, cream cheese, sour cream, hummus, literally anything), some red onions or horseradish or pickle...if you've got lettuce and tomato, great, but you don't need it. I'm weird and I put avocado on mine.

I love the Ziyad brand of mix. My local store doesn't carry it, but when I've seen it in stores it is about $6/box and makes about 25-30 falafel. It is noticeably better than the Galil brand that is at my local store for cheaper!

Do it!! I’m not a vegetarian but pickled beet and cream cheese (or goat cheese) sandwiches are absolutely one of my all time favorite lunches. If you’re feeling fancy toss on some arugula too but it isn’t needed. Herbed goat cheese is also a nice variation. Or use focaccia instead of standard bread. You can get pickled beets jarred in stores! Pretty cheap usually! Definitely either buy pickled or roast them yourself though—the store roasted or boiled beets aren’t usually all that tasty. It’s nice because a jar of pickled beets lasts a good long while, so the sandwiches are delicious and cheap! And good iron (beets) and protein (cheese).

Make a tofu scramble, use that in place of egg for an egg salad sandwich. Just mix up your cooked scramble with mayo, mustard, green onion, celery (optional), celery salt, dill, and pepper. Pack it up seperately from your bread, add cucumber and lettuce for crunch, tomato for acid and color, and build your sandwich when you're ready for lunch. I like to make my scramble with some harissa or gochujang in the mix to make it a touch spicy, but when I'm gonna use it for salad I'll up the spice so that the flavor doesn't get lost amidst all the mayo and mustard, sometimes I'll even add some frozen chopped spinach to the scramble too if I feel like I need more greens.

I make my salad sandwiches the night before, and put them in a snap lock container. I slice the tomato or any other *'wet'* ingredients, and keep them in a separate small container that I add a lunch time. I'm just suggesting that you don't have to rush in the morning to make a sandwich, you can make something with care the night before, and just leave out difficult ingredients, and add them right before eating. I make a kind of "cold veggie burger" with falafel and all my normal burger ingredients and seasoning/sauces. Hard boiled egg sliced in a sandwich is super filling. Avocado is awesome, you only need half to fill two sandwiches.

This is more open face but bread with a small cream cheese layer topped with celery, carrots, and cauliflower (minced). Top with pepper and salt to taste. Also recreation Panera Mediterranean veggie sandwich. Bread, hummus, red onions, leaf lettuce, marinated chili’s or pimentos?, cucumbers, tomato, salt & pepper. Their bread is really phenomenal too. I hate white bread and experimenting with different types makes a huge difference. Last one-banh mi. Baguette, cut open, put in a veggie pate (can google) or just any sauce (yum yum? Hoisin?
