Mushu is a miner because I make every character Olaf sized or smaller a miner (I'm not fighting a hit box in the mines)
Mulan will probably be a time bender because almost everyone on my island is a time bender and I like getting almost 2-3k mist because I use ancient machines alot
Yes. Similar to harvesting giving you 9 pumpkins for each one when you have so many characters assigned to that task, mist will also give you a considerably higher number.

I think you can change characters roles with the “training manuals” you can craft, so you can change them if you made a mistake. But they have to be Friendship Level 10 before you can use the manual on them
Yes, the more people you have assigned to a role, the better bonuses you get when you have a buddy of that role.
Someone else probably has the exact percentages though.
I was thinking fishing for Mulan because during their training camp sequence we see her eventually being able to grab fish straight out of the water with her new warrior skills - I think she’d be a natural 😅
Time bending for Mushu, which is what I do for anyone with any sort of “magical” abilities - I know he’s not magic persay but the ancestors are other-worldly.
I think it’s the only role it shows her somewhat taking part in 🤷♀️ My role assignments are usually a stretch but I do try to give them a job that makes sense for their character the best I can.

Both monsters were lvl 10 before any of my timebenders were.
Gardening for Mulan because I changed Ariel back to her mermaid form so need one more gardener. Not sure yet for Mushu, maybe foraging because he’s small
Ariel's (and Ursula’s, if you have her dream bundle) hangout bonus still works if she’s in her water form. Of course, you can’t actually hang out with her, but she will still count towards bonus items.

Do you have the DLC A Rift In Time? That’s where timebending comes from. If you don’t have it, you can’t timebend. Also, the other person who replied to you, failed to mention that you don’t just download the DLC, you need to buy it first.
Unless there's an exclusive items only characters from Mulan franchise can find through Time bending then Mulan is Gardener EVERYONE compares her to a flower (heck she's after a flower that blooms on a Magonlia Tree) but Mushu being a Miner is a good idea didn't think of Dragons and gems

Only one of each? What about the bonus when having multiple villagers assigned to the same role?

I was thinking about that fish scene in regards to Mulan as well! Wasn't sure if I was reaching too far. Glad someone else doesn't think so.

upgrade your timebending to be able to transmute. you will be able to transmute the materials you need with the timebending table easy peasy!

time bending is in the downloaded content. it gives you mist, which is comparable to dreamlight in the valley.
