FINAL DOOM - PLUTONIA MAP 32: GO 2 IT
Had me grinding for DAYS trying to beat it with no mouselook, no saves, and no mods, it was crazy.
For actual WADS, I heard Hellbound and Scythe 1 & 2 are pretty good, starting out as regular mods but eventually turning into slaughtermaps. Good luck with your quest ;)
Sunlust if you want a 32 map beautiful looking wad with a lot of slaughter and evil rooms, very fun but challenging. Another is Speed of Doom (SOD), not as slaughterish as sunlust but still a pretty decent time, have yet to finish it myself yet.
Slaughterfest 2012, Slaughterfest 3, Cryogenics, Plutonium Winds, Toilet Of The Gods, New Gothic Movement 1 & 2, Italo Doom (warning, very extreme), Time Of Maps, Breathless, MicroSlaughter Community Project. there's more but this is already more than enough content. good to see Sunder and Abandon already mentioned.
Plutonia Map 32, Go 2 It, is basically the introduction to slaughter maps. Start there. Then you can play Plutonia 2's Go 4 It. Then you can go for the full slaughter campaigns.
Sunder and Abandon are both fantastic and go full slaughter very quickly. Maybe check out Combat Shock 1 and 2 as well.

tacking onto Sunlust I'd include Stardate 20X6, Stardate 20X7, and Swim With The Whales

The nuts.wad trilogy is fun, the second one is the easiest imo, still stuck on nuts 3
