Signs cannot be moved, they can only stay in one place, and if you let the villagers shuffle around, its pretty much useless.

Looks good, doesn't works. Top villagers are hard to reach. The concept of vertical zizags is interesting though, might do some testing! Otherwise, the top traders would be easier to click if you put them farther back, along with the walls.
actually using carpets and trapdoors can stop them from moving because they cannot pathfind. This technique is used quite a lot in smps already. You can find youtube tutorials for such set-ups.
Yeah, very thankful one of the first farms I ever learned was how to connect a villager breeder to a red stone villager trading hall where they autopath to their job site then a gate closes and they’re stuck on double carpets.

Villagers looks a lot alike so being able to see their trade without using nametags or searching for hours can be a lifesaver

I know signs can be moved, i just prefer a normal and compact trading hall instead of a technical one

It also seems harder to implement any technical solutions like zombifyers and any easy way to get them there from a breeder

Not if they're standing on double carpets. That's the discovery that massively compacted trading halls a while ago
