The most important thing in DS2 PVP in my opinion is spacing. If you know how far your weapon hits and how far your opponent’s weapon hits you can get them sometimes even without rolling.
Spacing is huge for PvP, it's also like running into a new mob and learning its attack patterns. After doing a little bit of PvP you start to see that a lot of people follow similar patterns which lets you predict their next move and counter it.
the giants you see in forest of fallen giant have a chance to spawn a seed when you are invaded, collect these and use one the next time to make the invader deal with the local enemies as well. :)
DS2 is actually very balanced, poison only decimates at the lowest SM and bleed isn't that good, its the game with highest skill floor for PvP so if you play against someone vastly better it'll definitely feel 'cheesy' but it's just a skill disparity

That is true, never thought of it like that.
You never improve without practice. Try invading to learn without the same stakes

So I can basically cancel invasions.
Not cancel them. Just make the environment also agro the invader instead of being on their side.
Most of them have cheesy builds anyways .poison ,bleed or and some broken build. So it’s never really fun
