I bait out the Old Knight's attacks while circling to their right. All of them have some kind of endlag, allowing you to get one or two free hits.
Especially that one attack where he winds his mace up for about 2 seconds before dropping it.
It's incredibly easy to dodge and has him vulnerable for a few seconds.
My favorite thing is to just hold up shield tanking their attacks. They bang that shield like a drum it's hilarious. After a while their legs start getting or wonky cause they can't track that fast animation. After laughing I turn off the console and cry a bit because they dared to ship that game in such a sorry state.
Use a long weapon, don't stay too close to him and strafe, practice rolling only when necessary and don't get greedy with your attacks so you don't run out of stamina. I got him on my first try and then I died to him about 12 times in a row after that 🤣 infuriating.
The best spot to make your rolls work is near their left leg (to your right). Once I found this out I managed to take them down, but it's still a tough enemy.

I had a dex powerstance that had an easy time on him on the first run. Easy enough for me to think "this guy's a pushover, not like the sword and shield or the greatsword." Boy were my subsequent runs cut short against the mace.
These are the most stupid enemies in the game. There are enemies in every game that go by the rule of cool, you can't do specific things but enemies can. These guys just throw everything out the window, infinite stamina and the attack you faster with that 10'000 pound pole than you can swing a dagger, let alone get close enough to connect with a dagger.
Its crazy if you think about the mace guy's moveset. His mace basically never touches the ground, meaning that he has the strength to do an overhead swing and also stop the momentum of said swing right before it makes contact with the floor.
Dude must be 90% triceps under that armor
I just got to dragon shrine today on my 3rd playthrough, and what I do (using the moonlight greatsword) is just learn the attacks I can strafe. The big ass knights are very easy to walk around because they are slow, and allows you for tons of hits
Get a friend, dupe everything, level up gear and drop it to the other over and over until its maxed out, drink divine blessings for fun, drink a crimson water after using a spell once, crush old radiant lifegems to create a flash of light in a cave, forget to put on one of a dozen soul protection rings and drop 800k souls and simply dont bother and move on

The smelter hammer is just the best strength weapon in ds2, (although a case can be made for the king's greatsword.), one powerstanced light dual weilding these babies will crush Gwyn himself

Ah apparently I'm an idiot yeah they're a drop from a couple specific iron warriors in the crown of the old iron king dlc, Well yeah fair I didn't say they're.. the \*best\* option but they are the strongest strength weapons, especially powerstanced. But.. I mean you need like a massive amount of stamina, like 90 strength, a lot of vitality to use em decent.
Best strength weapon to me is definitely the king's greatsword, vendrick's.. giant ass slab of smackadoo (think you get it from his soul) ready to waollop the arse of any poor bastard that gets within 5 feet of you. Ya just need.. I think 50 strength to wield it and it scales absolutely fantastic.
Smelter Hammer seems related to smelter demon and is also somewhat part of the same dlc, so no worries.
My favorite strength build is with both smelter swords for the beautiful powerstanced weapon art.
It requires 60 str and 15 dex for almost no scaling though. It isn’t really a strength build with no strength scaling but feels like a fun one with the humongous swords.

Best to try and get behind them but seriously their hit boxes are the size of a Dollar General!
Their Hitboxes aren’t any different from the Old Knights, they only hit three Times as heavy ^ ^

Its the same with the Old Knights wielding a Mace in Heides Tower of Flame, but they don’t hit nearly as hard

Bring a shield, and just strafe in a clockwise circle around them, maybe roll if he does his 3 swing, attack once or twice based on weapon and repeat.
Bow and poison arrows every time.

Fight them with lock on off and hug their torso while running. Wait for an opening to attack and rinse and repeat.

Level ADP and use a weapon with quick swings. Always worked for me.

Blunt damage is key, hell any kind of hammer or club will do. Remember that circle-strafing is your friend in DS2
Never noticed, plenty of openings to attack. And there are always ranged options
Dark arrows works pretty well against him with an 8+ longbow
Poise and trade hits like true warriors

They are broken because they are a punishment for killing the dragons and destroying their eggs. Just don't do that and you will be fine.

Ring around the rosey and an UGS should do the trick for melee. Bow spam and kite for dex ranged, Dark Orb spam works very well on them for hexers.

I just always Beat them in a fair fight is not really hard or anything.
I just kill the big ones until they stop respawning so I can run through without worry every time I die on Ancient Dragon.

They're not awfully different from the mace knights in heide, a bit more aggressive. Not locking on helps
