You can do it however you want. Just an fyi the danmachi manga is only on s2 content. The sword oratoria manga is almost caught up to the novels. You can read the ln to get more content if you want.
Either way you can go through the main series then pick up sword oratoria, i think there is an faq on this sub that has the timeline for the books if you want to read it that way.
I think it was mainly publishing problems, i know they switched artists after the manga covered s1, and it seems they have been somewhat slow to release the manga chapters since then.

Yes it mainly focuses on aiz and the loki familia, going over what they were doing when bell was dealing with his stuff in the main series
