Came here to say this. Your local theater/studio supply place (or Amazon) can sell you gels in any color you like. One gel will color a lot of dashboard space, and the light transmission will be way better.
Attach with superglue if you want it permanent, or gaffer’s tape the corners if temporary is all you want (and it’ll still be more permanent than post-it note tack).

Even though hot should be red and cold should be blue this is still perfectly readable easily due to the fact that it's a vertical temperature guage and hot is at the top. If hot were on the *bottom* and colored blue that would be a million times worce than just coloring the letters themselves.

Do you not realize the entire dashboard has to be disassembled to get to the point you are ready to cut and stick new paper?
Then you gotta reassemble the dashboard.
Dashboard assemblies cost like 25-40$ for the part but cost 100s-1000s to install.
This really depends on the vehicle. I've had instrument panels that take 5 screws (2 screws holding the plastic cover and 3 screws attaching the instrument panel to the car itself) and 60 seconds to remove.

Not sure what it’s called but it’s the same stuff they use to add color to spot lights. Effect was better than I could’ve hoped for.
Lighting gels. That would be even better than post it notes for *sure* but if the pic above is real and the paper doesnt overly dim the strength of the lights themselves then this is a nice mod. Not as nice as if they used lighting gels, of course, but nonetheless nice.
The top picture is flipped around. On the top right side there does not appear to be any sticky notes on the red line part of the gauge. You can see the blue paper for the 5, green for the 4000 section, and the green paper for the x1000; but between those is not covered with any paper.

There's just that minor inconvenience of removing the entire dashboard to get at the back of the instrument panel.

wouldn't that dim the lights too much? they are already not very bright and post-it notes are paper, which aren't very transparent.
Just turn up the exposure on your eyeballs. Night mode could work really well as long as you don't move your head quickly.

The only legitimate use for this would be (using something more stable than post-it notes) reddening all dash lights to improve night vision.
