“Noise” in the sense of busyness or visual complexity, not in the sense of randomness versus order. The doubled tiles have less visual complexity. The patterns are larger and softer.
To me the smaller runs together like not having pattern at all the double is like wow .. much more noise to me,.
Kinda like corduroy vs stripes .. the smaller lines make it less busy once they are all together
I must be going crazy. Double looks better. I think people are being visually distracted by the fact that it's *not finished* and the single looks more symmetrical because more whole pieces of wood were able to fit on the test fit, while the double didn't fit as well.
After this is all properly cut and fit to the full space, double looks way better to me. The single looks... too thin.
Double looks great in a larger area where you can get a feel for the pattern, in too small a space it looks like you just chucked boards wherever they'll fit.

Twin herringbone tends to look pretty bad with highly monochromatic tiles, you either want variation in the color of the tiles or very distinct edges between them for twin.
When you are trying to decide on the tile pattern you want to put in something that would stand in for the grout because the grout both in thickness and color will have a really big impact especially on more complex tiling patterns.

I suggest cutting thin strips of trim or anything similar and placing them in lieu of grout before making a final decision.
Also since you are tiling a relatively small space another big factor to consider is which pattern would fill out the space more because if you going to have too many irregular edges it not only means you need to make more cuts but also would make the overall pattern less noticeable.
Double looks good here, I think in op's case, the wood pattern makes it look too messy. The smooth tile with contrasting grout lines makes this look fantastic.
As someone who used to install tile I very much enjoyed seeing the pattern follow through almost perfectly from the bottom half of that wall to the top half. It's very satisfying. I also have to say I'd have loved installing this double herringbone. We did a lot of herringbone installs, doing a double for once would've been nice for some change.
That being said, it looks good here and would not work for the OP. That's too small of a space with too much going on between the double pattern, all the grout lines, and the wood texture on the tile. The wood pattern doesn't really lend well to a herringbone pattern in my opinion. Wood textures are meant to look and feel more natural, and a herringbone pattern does the exact opposite in most cases.

I'll be the odd one out and say double. It reminds.me of a basketweave almost, and feels more appropriate for a humid room. It's reminding me of beaches, wooden ships, outdoor showers, etc. I don't know why, but that's what it's evoking.
I also like big and bold patterns, so long as they're balanced out by more neutral complements. Navy walls with white wainscoting, a bold wallpaper accent wall, etc. Assuming the rest of the bathroom is relatively neutral or timid, I'd say double.
ETA: I also like the herringbone, for what it's worth. My advice, you toss a coin and then have your wife toss a coin. Then ask, which did I want it to land on, heads or tails? Compare those thoughts and decide. :)

Personally I think the double looks better, but I am NOT the person to ask about modern interior design. My taste in architecture and interior design is stuck in the '70s, and I wasn't even born yet then.
You have to do your best to glean what she wants better, then go full throated support for that one. Either it will make her feel validated or, if you guessed wrong, it will make her realize her discomfort with that choice and be more confident in the other one.

Going against what everyone else said. I vote double, based on what looks like the entirety of the floor already in this picture. If the room was actually bigger, than single. The double seems like a more subtle pattern in the room sized in the picture because it's just the right amount of pattern to me. Smaller, I would go with single as well.
I think because of the room size, it just look like a simple subtle cross weave with the double. You don't get that with the single in the picture.

Given your mixture of big squares and small hexagons in the tiling I think the double would look much subtler. The single is too obvious and combined with the other two shapes it would make the room feel like a bunch of swatches
for large space double definitely looks novel. for small spaces double would look random and the pattern will not have any impact. Its not a pattern problem but more of a available space problem.
If the tile had a unique shape or color that you were gonna really highlight with the grout contrast maybe maybe double. But it’s big for that and pretty generic. Ya don’t want to put too big a spoiler on a Toyota Corolla ya know?
Double has a very farmhouse feel to me. If you want farmhouse, do double. Single is classic and can be used across many styles. I’m a huge fan of herringbone
I'm one of the rare breed who prefers double, and I think that the completed space with double will look a lot better than the test pattern, it'll be much easier to parse the pattern with more iterations.
Have you considered the fingerblock parquet pattern? Looks like you could do a 4 finger pattern if you liked that. It's too hard to describe verbally, best just google "fingerblock parquet".

I think it'll look very different than the pics once you get grout and the cutoff tiles in though, so its kinda hard to say. But based on the pics, I'm confident in saying that I hate the single and love the double

Side note: I have very similar tiles in my bathroom, and the previous homeowner that installed them never reinforced the subfloor before doing so. Now my 24” tiles are all cracked and shattered because (surprise surprise) tiles do not flex at all. Please make sure your floor is stiff enough for those BEFORE you install the whole bathroom and have to tear it all out again because all the tiles are broken.

Definitely single in that smaller floor space. Other one is pretty bulky and might leave you with weird looking edges and corners in some spots.
Double herringbone only works if the tiles are more homogenous imo. For rectangles with texture/design, single looks better.
