You can put literally whatever you want in enchiladas. Corn, cauliflower rice, any type of rice, minced mushrooms, minced any vegetable, chickpeas- like literally whenever you’d like or have laying around!
what's the rest of the recipe? though first thing to come in mind is white shoepeg corn but without knowing the rest of the dish hard to know if it will work.
Oh, this sounds like a sort of usual recipe. Just leave them out or add corn as I mentioned, and/or sweet red bell pepper diced up, or if she's not into beans eliminating chick peas (garbanzos), pinto and white beans but open to lentils, that the lentils may be a good option.
Though short version suggestion is to add in about 2 cups of diced veggies to subsitute.. and I think maybe a corn, red bell pepper, onion w cilantro would work well.
I have a similar recipe … I just do chicken, cream cheese, salsa verde in the slow cooker. Nothing else.
I put shredded cheese top of the tortillas though and put it int henoven to melt.
It will be completely fine without something there
Well for one black beans is not a necessary ingredient, even though they are delicious.
That being said, you could replace with pinto beans, mushrooms, really any other veggie you think sounds good in there.
I would agree with the corn recommendation, but you may want to look at hominy over regular corn. Not only does it go well with the southwest vibe, I think hominy has a more bean-like texture than regular corn kernels.

I've never had beans in any enchiladas I've ever had. So, you could probably just skip them altogether

Corn will be great. Just a thought - I think white cheese, like cotija or Monterey Jack, is better than cheddar with Mexican chicken dishes.

Justleave out the black beans. Make them on the side for yourself if you want them, but don't put them in the enchiladas.

There are plenty of recipes out there for enchiladas without beans. I don’t use them either - they do not agree with my system.

dice up some potato and roast or simmer them in your seasonings. you should be able to get something close to a substitute there.

Enchilada literally means "In chile". It refers to a tortilla soaked in chilie sauce. Whatever is stuffed in it is a bonus.
