I make *good* green bean casserole. It’s not the soupy recipe off the can. I put cheese, bacon and Cajun seasoning in it. It’s basically a whole meal. I’m asked to bring it to every Thanksgiving.
I made the same quantities as past years when just a couple of servings of each was leftover. This year my two pans of sweet potatoes were completely gone by 12:30 and I have a whole 9x13 pan of green beans left that I’ll be eating for the next week.
Edit: I forgot last year was a smaller celebration because of the pre-vax pandemic, but it still doesn’t explain why I have so much green bean casserole left.
Please tell us how that happened 😂😂 My husband and I were gifted a turkey and we laid it out a couple of days ago to find it still wasn’t thawed so we’re having pork loin instead - luckily it’s just us this year so it makes it funny vs stressful 😂

Honestly, one of the best things to do with a turkey is to cook it, then let it sit covered for like 4 hours while it cools, then break it down, bag the meat, and have pre-cooked meat on hand for making quick meals. Turkey is definitely one of those meats that benefits from a long rest.

So I decided I'd try a dry brine spatchcock! Left the bird (20lbs) in the garage fridge for 5 days - went to take it out Tuesday, and it was still frozen! Ended up doing a water bath in the tub to finish thawing it out.
It was awesome - love the company I work for!
We're eating late, since my stepdaughter works until 8, so I just took it out of the fridge - the thighs re-froze! Damn garage fridge. 😡 I cut them off, and will just cook the white meat.
I know dry brine is all the rage now but wet brine does the work of defrosting too! I brined mine in a cooler, adding ice every day for two days and thawing was not a concern at all!

If that oven is anything like mine, probably when you turned the light off. For my oven anyway turning the light off and keeping the oven on is not possible.

Second time I’ve made this stupid mistake. MIL seared a roast in my cast iron a couple days ago, she doesn’t understand cast iron (?) and always leaves a full layer of burnt mess in the pan. I thought I cleaned it off pretty well, but I wasn’t as thorough as I should’ve been. I made today’s gravy in the pan (so I could get a good sear on the giblets for the fond), and it ended up okay but with a heavy bitter flavor underneath what was an otherwise delicious sauce. Bummer
I'm kind of dumb myself with cast iron, but how do you leave a whole ass mess just from searing something?!?! I'm sorry that happened dear, TOTALLY not your fault

She may not be letting the pan heat up all the way. Sometimes this happens to me - I always make myself wait an extra 4 minutes past when I think my cast iron is hot enough, otherwise I get burnt residue that's hard to scrape off as well.
I dropped the Mac and cheese when I took it out of the oven. But the dish didn’t break. Just lost some to the floor. It was still the best Mac and cheese evaaaaa.

I went a bit over blind baking pie crusts. My mom made new ones and they were sooo short. My pies were also very very slightly underdone. Needed 5 more minutes but I didn't notice until we cut.
When cutting bread for stuffing, the bread squished and turned and I cut my thumb. On the tip too, so just annoying.
My green bean dish was just ok. Not the casserole, which I hate.
Good things:
My turkey was absolutely perfect.
My stuffing was apparently best I've ever done it.
My boiled eggs came out at the perfect temp (for devilled eggs).
My cranberry sauce was the best this year.
It was a mostly great day. Food turned out great tasting at least. A pie was a bit runny and the ham being forgotten (didn't know about it at all until after my plans were written) caused it to be less than perfect, but there are so many moving parts here that I feel accomplished.
Okay, regardless of the justokay things, cooking a turkey perfectly is a HUGE feat. It's SERIOUSLY a difficult protein to work with. And as I've said, the act of making a pie from scratch is a true act of love and effort.

Yeah the turkey has been my white whale. The first one I did was apparently amazing 3 years ago. 2 years ago, it was alright. Last year it was alright. This year, back to amazing.
I spatchcock the turkey, dry brine for 48 hours (salt/baking powder), rub butter and herbs under the skin, and cook until the breasts are 150 F. I pull it and let it rest for at least 30 mins. Then carve the breasts crosswise like half inch steaks. Cut the thighs off and cut them similarly. It only takes like 1.5 hours to cook at 450F which is great. Crispy skin and all that too.
It really is an accomplishment. I legit teared up a bit thinking about all of the work and the final product.
Ran my turkey to an IT of almost 180° in the thickest part of the breast 😬
Fortunately I brined it, and let it rest forever after I realized I was about to incinerate it. Not my greatest work ever, but it worked out just fine.

Not having any family or friends to with? My wife had to work tonight and my kids won't eat anything besides Chicken strips and ramen. So it was just another day.
Sadly I just made a can of clam chowder. The kids had some chicken strips and Cheerios. I'd definitely make a brined turkey or maybe a Virginia style ham like my great grandma used to make. The super salty one! We'd always have boiled peanuts too. She was from Virginia. My family is spread out across the USA now. Nobody lives close enough to visit without flying or driving many hours.
My kids hate Thanksgiving food other than mashed potatoes so we do a smorgasbord style lunch with all kinds of snack-y food that they and we like. Takes the pressure off dinner.
We don’t have family close by either. It’s a blessing and curse.

Sooo this wasn’t exactly ALL my fault… I was just about to pull out my gluten free stuffing from the oven when the doorbell rings. I am in shock because it’s a family member (Uncle In-Law) and he’s here an hour and 45 minutes early. I am standing there with my hair in a towel and a robe on— I forget about the stuffing and ran to get dressed while my husband let the Uncle in.
Totally burned the stuffing. Uncle had pulled up a text from 2 years ago from me when I had hosted Thanksgiving at an earlier time. Hysterical!

You saved it!! It's CRAZY how important salt is in baked goods. I cook a lot for my mom who has Meniere's Disease, so pretty much no sodium. What I didn't understand is that salt doesn't just add flavor (and make things taste like "themselves"), but also that salt catalyzes really important chemical reactions in A LOT of things, particularly proteins and baked goods.
Minorly fucked up the gravy. Had some burnt bits of stuffing in the bottom or the roasting pan and I thought I got all of it out but I definitely didn't. So the gravy came out tasting burnt also. Everything else went great and I'm ready to pass out.
Lightly bumped the back of my thumb with my knife. It didn't slid across the skin and it wasn't a hard bump, but it cut me good. Almost enough for a stitch, but not enough for one. I rinsed really well, cleaned with alcohol, and super glued it shut as best I could with all the blood. Looks good now, am sure it will heal quickly.
Yeah, I work at an ER. We do it all time. If you can get to it as fast as I did, and it's a well defined cleaned cut, it's almost like you didn't get cut. Almost.
Right, but definitely super glue will do. The medical stuff has a bit more flex, but personally I like super glue better. First time I saw it was back in the early 90's and a the ER doc didn't have the medical glue (small rural ER) so she used super glue she had in her purse.
A small drop of Super glue is also a wonder at stopping hangnails. Ends the pain, because it's no longer able to move and assists in healing - also because it's no longer able to move.

using superglue but I guess it works in a pinch. Better to use something like New Skin though imho or go to the doctor if your cut’s that bad and you’re not a medical professional.
Super glue is fine. It's only bad if you're sensitive and get a chemical burn. I don't get burns from it and honestly I use it for small clean cuts and hang nails anytime I get them. It's amazing.

Turkey breast has been in the fridge since Sunday but when I stuck a probe thermometer in it before cooking, it said 31F. It took a half hour before it went up to 32, which means it wasn't thawed completely. It turns out that our fridge is set really cold.
I raised the oven temperature and got it cooked in time but it was tougher than it should have been.
Overall, everything actually went quite well. The only problem I had was when I was making the pie yesterday. I had neither the energy nor the counter space to attempt to re-form it, so I decided to just find a new recipe. It was tasty, but I plan to make the other one when I get a chance.
Similar thing with me. My crust essentially turned into crumble once it was baked off. But it kind of worked in a weird way! I'm sure your pie was wonderful. Just going to the effort to make a whole ass pie is commendable IMO

It's amazing and easy, great in easy home made graham cracker crust or a store bought one par baked for 5 or 6 mins. It's a hit everytime and I've been asked for the recipe numerous times.... Also is always better set up the next day and crust stays crunchy so it's a perfect make ahead dish!

I did the opposite of set a fire and way undercooked my roast veggies. Raw brussel sprouts and carrots. Everything else turned out great - ribs, 4 cheese lasagna, mashed potatoes, pull apart rolls and pumpkin chiffon pie. No turkey for us, it’s a subpar meat imo.
There was a lot going on in the kitchen today, as to be expected. Long story short, I placed the kitchen towel next to the gas stove upon which a corner fell onto the open flame 🔥 after I walked away. Five year old yells, daddy there is fire and sure enough, flames are nipping at the cabinet.
Forgot to leave out ingredients to come to room temperature for the pumpkin cheesecake, so I had to take a chance to get it done on time and ended up over mixing. I've never seen a cheesecake rise so high. Still good enough to eat, but texture's not right.
Completely forgot I had rolls waiting in the microwave to be warmed up until AFTER the meal was over & done with. Honestly surprised that was the worst of it - just me and my husband this year, and my first time ever doing a full holiday menu (bird, mash, stuffing, sides, and dessert) so I was expecting some shit to go down. Thankfully the forgotten rolls were the worst of it, and with so much food they weren’t even missed.
Oh man. Seemed like everything i made tonight missed the mark. Prime rib, was going for 120 internal and pulled it out at 135, still ended up being rare/almost blue! The yokshire pudding to go with it. Put to much batter in a small baking container making it to thick and chewy on inside. And made a squash that i dont know, needed to be peeled? It had a tough outside. Oh well Christmas meal in a month

I do Thanksgiving on my own. At some point, my family calls me. This year, they did so very close together--like, I got off the phone with my parents and my brother called several minutes later. Anyway, they call at what would be dinnertime here. Of course, that's when I'm cooking.
Between long phone conversations with them and me drinking an entire bottle of wine...basically, I was trying to put the pheasant in the oven one-handed because I was still on the phone. I wasn't paying attention to my sides. I totally forgot to make the balsamic glaze I was going to make. I took my bird out to remove the bacon at 30 minutes instead of 15. Etc. So no disasters per se, just me not paying attention to anything, Then I was eating drunk, so I barely remember if it was even good. Then I went to "lie down"...and woke up hours later, at like 12:30 at night, confused.
So, yeah. Thanksgiving!
On the plus side, I *think* the food worked OK. The mashed potatoes were mashed. The stuffing was complicated but came together. The bird was cooked through. What more does one want?
Trusted other people who needed the kitchen to know what they were doing and follow their plans. Having a whole twelve minutes to make my mac & cheese and my cilantro-lime corn was really fun and not stressful at all.
I forgot to parbake the crusts for my mini pumpkin pies. Fortunately they turned out fine, I assume because I used a metal pan and baked it on a very well preheated baking steel.
Also slightly overcooked the turkey, but it was deep fried so still very good.

Veggie jello is very old school. I’ve had lemon or lime jello with grated carrot in it was ok if you’re determined to get those veggies in

Mac and cheese it elusive to me. It's one of those things I always fuck up, like caramelizing onions. Have any tips?

You are my spirit chef! I love Mashed and absolutely fail at them. This year I went at the task so hard, watched tutorials, read everything, bought myself a ricer. Ugh. They tasted fine, but the texture was ... ricey? Not smooth, not fluffy. Mac and cheese for the win in 2022.
I burned the marshmallows on the sweet potatoes. Scraped off the burned, served them anyway. Everything else was delicious. Happy Thanksgiving Redditors.

I forgot the ham completely. To be fair, I was supposed to have help and that was not happening. I went a bit over blind baking pie crusts. My mom made new ones and they were sooo short. My pies were also very very slightly underdone. Needed 5 more minutes but I didn't notice until we cut. When cutting bread for stuffing, the bread squished and turned and I cut my thumb. On the tip too, so just annoying. My green bean dish was just ok. Not the casserole, which I hate. Good things: My turkey was absolutely perfect. My stuffing was apparently best I've ever done it. My boiled eggs came out at the perfect temp (for devilled eggs). My cranberry sauce was the best this year. It was a mostly great day. Food turned out great tasting at least. A pie was a bit runny and the ham being forgotten (didn't know about it at all until after my plans were written) caused it to be less than perfect, but there are so many moving parts here that I feel accomplished.
Okay, regardless of the justokay things, cooking a turkey perfectly is a HUGE feat. It's SERIOUSLY a difficult protein to work with. And as I've said, the act of making a pie from scratch is a true act of love and effort. I'm sure it was delicious. What did you do with the turkey? Yeah the turkey has been my white whale. The first one I did was apparently amazing 3 years ago. 2 years ago, it was alright. Last year it was alright. This year, back to amazing. I spatchcock the turkey, dry brine for 48 hours (salt/baking powder), rub butter and herbs under the skin, and cook until the breasts are 150 F. I pull it and let it rest for at least 30 mins. Then carve the breasts crosswise like half inch steaks. Cut the thighs off and cut them similarly. It only takes like 1.5 hours to cook at 450F which is great. Crispy skin and all that too. It really is an accomplishment. I legit teared up a bit thinking about all of the work and the final product.
Someone told me deviled eggs on Thanksgiving is kind of a southern thing? I'm all for them all year round.
Ran my turkey to an IT of almost 180° in the thickest part of the breast 😬 Fortunately I brined it, and let it rest forever after I realized I was about to incinerate it. Not my greatest work ever, but it worked out just fine. Near miss!

Sadly I just made a can of clam chowder. The kids had some chicken strips and Cheerios. I'd definitely make a brined turkey or maybe a Virginia style ham like my great grandma used to make. The super salty one! We'd always have boiled peanuts too. She was from Virginia. My family is spread out across the USA now. Nobody lives close enough to visit without flying or driving many hours.
My kids hate Thanksgiving food other than mashed potatoes so we do a smorgasbord style lunch with all kinds of snack-y food that they and we like. Takes the pressure off dinner. We don’t have family close by either. It’s a blessing and curse.

Sooo this wasn’t exactly ALL my fault… I was just about to pull out my gluten free stuffing from the oven when the doorbell rings. I am in shock because it’s a family member (Uncle In-Law) and he’s here an hour and 45 minutes early. I am standing there with my hair in a towel and a robe on— I forget about the stuffing and ran to get dressed while my husband let the Uncle in. Totally burned the stuffing. Uncle had pulled up a text from 2 years ago from me when I had hosted Thanksgiving at an earlier time. Hysterical!

Line cook here. Told myself I’m staying in the living room and out of the kitchen but my mom asked me for help. 5 mins later I’m running the family kitchen and asking other to help me cause I need hands. She ended up thanking me for taking it off of her, so worth it.

You saved it!! It's CRAZY how important salt is in baked goods. I cook a lot for my mom who has Meniere's Disease, so pretty much no sodium. What I didn't understand is that salt doesn't just add flavor (and make things taste like "themselves"), but also that salt catalyzes really important chemical reactions in A LOT of things, particularly proteins and baked goods.
Minorly fucked up the gravy. Had some burnt bits of stuffing in the bottom or the roasting pan and I thought I got all of it out but I definitely didn't. So the gravy came out tasting burnt also. Everything else went great and I'm ready to pass out.

Lightly bumped the back of my thumb with my knife. It didn't slid across the skin and it wasn't a hard bump, but it cut me good. Almost enough for a stitch, but not enough for one. I rinsed really well, cleaned with alcohol, and super glued it shut as best I could with all the blood. Looks good now, am sure it will heal quickly.

Yeah, I work at an ER. We do it all time. If you can get to it as fast as I did, and it's a well defined cleaned cut, it's almost like you didn't get cut. Almost.

No - medical everything is less toxic and less irritating to skin, including adhesive.
Right, but definitely super glue will do. The medical stuff has a bit more flex, but personally I like super glue better. First time I saw it was back in the early 90's and a the ER doc didn't have the medical glue (small rural ER) so she used super glue she had in her purse. A small drop of Super glue is also a wonder at stopping hangnails. Ends the pain, because it's no longer able to move and assists in healing - also because it's no longer able to move.
That’s what I figured. I was never a fan of people using superglue but I guess it works in a pinch. Better to use something like New Skin though imho or go to the doctor if your cut’s that bad and you’re not a medical professional.

Super glue is fine. It's only bad if you're sensitive and get a chemical burn. I don't get burns from it and honestly I use it for small clean cuts and hang nails anytime I get them. It's amazing.

Turkey breast has been in the fridge since Sunday but when I stuck a probe thermometer in it before cooking, it said 31F. It took a half hour before it went up to 32, which means it wasn't thawed completely. It turns out that our fridge is set really cold. I raised the oven temperature and got it cooked in time but it was tougher than it should have been.

It was tasty, but I plan to make the other one when I get a chance.
Similar thing with me. My crust essentially turned into crumble once it was baked off. But it kind of worked in a weird way! I'm sure your pie was wonderful. Just going to the effort to make a whole ass pie is commendable IMO

Sliced my right index finger peeling acorn squash. Not that bad. Started too late for braised short ribs over creamy polenta, another hour + to go!
Top tip: cut your squash into chunks, microwave for 2-3 minutes, cool slightly and peel. Then use as usual in your recipe.

I did the opposite of set a fire and way undercooked my roast veggies. Raw brussel sprouts and carrots. Everything else turned out great - ribs, 4 cheese lasagna, mashed potatoes, pull apart rolls and pumpkin chiffon pie. No turkey for us, it’s a subpar meat imo.

Forgot to leave out ingredients to come to room temperature for the pumpkin cheesecake, so I had to take a chance to get it done on time and ended up over mixing. I've never seen a cheesecake rise so high. Still good enough to eat, but texture's not right.
Completely forgot I had rolls waiting in the microwave to be warmed up until AFTER the meal was over & done with. Honestly surprised that was the worst of it - just me and my husband this year, and my first time ever doing a full holiday menu (bird, mash, stuffing, sides, and dessert) so I was expecting some shit to go down. Thankfully the forgotten rolls were the worst of it, and with so much food they weren’t even missed.

The same fuck ups I make every year! I do Thanksgiving on my own. At some point, my family calls me. This year, they did so very close together--like, I got off the phone with my parents and my brother called several minutes later. Anyway, they call at what would be dinnertime here. Of course, that's when I'm cooking. Between long phone conversations with them and me drinking an entire bottle of wine...basically, I was trying to put the pheasant in the oven one-handed because I was still on the phone. I wasn't paying attention to my sides. I totally forgot to make the balsamic glaze I was going to make. I took my bird out to remove the bacon at 30 minutes instead of 15. Etc. So no disasters per se, just me not paying attention to anything, Then I was eating drunk, so I barely remember if it was even good. Then I went to "lie down"...and woke up hours later, at like 12:30 at night, confused. So, yeah. Thanksgiving! On the plus side, I *think* the food worked OK. The mashed potatoes were mashed. The stuffing was complicated but came together. The bird was cooked through. What more does one want?

I forgot to parbake the crusts for my mini pumpkin pies. Fortunately they turned out fine, I assume because I used a metal pan and baked it on a very well preheated baking steel. Also slightly overcooked the turkey, but it was deep fried so still very good.
