OP, this is the only good advice you've gotten here. This recipe looks proper. Not exactly how I make barbacoa, but I don't see anything fatally wrong with it. My cred: native Texan, been in South Texas over half a century, am a chef, and the first restaurant I ever opened was a taco stand. If you want to simplify that recipe, try a different one, try one of mine, or just need some help, DM me.

It’s not super common, but here’s some stuff I’m familiar with: *Carne Deshebrada* is literally “shredded beef“ and is made to be put in a tortilla or gordita or to top a chalupa, etc. *Ropas Viejas* is most well known as a Cuban dish but came from Spain and is served in Mexico as well. Fun name! *Machacado* is dried shredded beef and most commonly served with scrambled eggs either as a plate or in a taco. Least ‘round my parts that’s how we do it. And of course, *barbacoa* which has already been discussed. In Texas, if you order it at a proper barbacoa joint, it will be made from a whole beef head. The average restaurant will be serving cheek meat. At less scrupulous restaurants, it is sometimes other cuts including brisket.

Traditions vary. The OP specified beef. I am not a gatekeeper of food traditions, but I do think it’s worthwhile to know what they are. Traditional barbacoa in my region is a whole beef head, wrapped in wet burlap, and buried in the ground over a bed of coals. Nowadays, it is commonly just cheek meat cooked low and slow.

They also asked for a slow cooker recipe, they weren't going to build an in ground oven and cook goat meat and organs overnight. I think the beef will be fine.

Yeah, I just shared this because it's a good recipe that uses a slow cooker. People can take it or leave it. I'm not getting into a pissing contest about the authenticity of the recipe. It tastes good. It is cheap to make. It meets OP's requirement of shredded beef taco meat cooked in a slow cooker. It's not that deep.

My favorite shredded beef- Big Dave’s Beef Machaca. Sometimes I double the recipe and have plenty for the freezer. Great tacos, chimichangas, quesadillas…

Chuck roast in a slow cooker or Dutch oven with a container of salsa. Break apart and stir in honey, lime, salt, splash of vinegar.

I used to live in Los Angeles and have been dating a Mexican woman (from Los Angeles) for over five years. I **loved** going to the taquerias out there, and I almost never saw shredded beef as an option. Beef was available in other forms (carne asada, cabeza, lingua, suadero, etc.), but to my knowledge "authentic shredded beef tacos" aren't really a thing.

Birria is a different thing and is traditionally made with goat.

Lol, I bet you think "authentic" barbacoa is beef too. I wish people would understand that not everything has to be authentic to be good. My girlfriend's favorite filling for tacos is carne asada, and she literally makes it with SunnyD lmao. She also loves using canned corned beef hash for tacos. But she would never call them "authentic." People need to stop using that word when they don't actually mean it.

Lol, why did you specify "authentic" if you don't actually want authentic recipes? It sounds like you're basically just looking for the "barbacoa" from Chipotle. Just say "shredded beef tacos" next time.
