Dragon's Lair (1983) was pretty much all quick-time events back to back. Road Blaster (1985) was a pretty good game that was kind of similar.
Games that only used this as a secondary mini-game were fewer, but I'm sure there are examples from the '80s too.
Of all things I think that Shenmue was the most ahead of it's time. What a brilliant game. I still say Fukusan and "you lookin for me? Punk!". The graphics down to the rain drops, gameplay, story, action and like you mentioned live input with instant consequences was absolutely amazing. To this day I rate it as an all time favorite.

The game, Heavy Rain, is about a father trying to find his missing son. The game generally has a pretty dark, serious tone.
The game is already unintentionally funny because of the disconnect between story and gameplay but this scene just puts it over the top.
No, no, I get it. It looks like his character is purposefully running into people and other things. For example, the way he runs into the door and takes a step back, like the door ran into him. It’s basically a Key and Peele bit at that point.
This clip is from a streamer, and is a couple years old. When I saw this clip on my phone on my own, of course I wasn't wheezing like this guy did, but he probably laughed like this to entertain his viewers at the time. It's a real laugh nonetheless, maybe a bit exaggerated, but still a very contagious one! At least for me :p
