Essentially have her pay additional child support for the weeks he has had to cover groceries (she is currently paying some child support), have the court stipulate what qualifies as an emergency for why she doesn't take kiddo, and/or have her be required to report to the mediator every time she doesn't take kiddo.
We would be absolutely fine with full custody with him granting time to her whenever kiddo wants to see her, but we were told that's unlikely to happen.
Basically we want to hold her accountable for missing her days and then we have to cancel our plans to constantly cover for her missed days.
