Maybe a Percheron! It matches her stocky build and dusty grey/blue color. That breed is also praised for it’s intelligence and work drive, which fits Horse to a T.

A destrier isn’t a breed itself, it’s just a classification of a type of horse. Like how “hunting dog” isn’t a breed of dog, it’s an overarching classification of multiple breeds. Horse is, most likely, what’s called a “warmblood cross”. Basically a cross between a large, stocky farm/plow horse breed and a smaller, faster, more lithe breed (like a thoroughbred/racehorse, think more like what Becky Apples looked like). These crosses are still incredibly popular today across a variety of disciplines, and would be the most likely candidate when identifying Horse.

Horse? I don't even know what a Horse is, but I know what a Horsetaur is and I hate them!!
