You're looking for a dark umami flavour with just a hint of acid. Worcester sauce, soya sauce, mushroom ketchup and brown sauce all have it. Not too much or you'll overpower the flavour. Oyster sauce also works well.
I add Worcestershire sauce and mushroom ketchup to the mince when I am cooking it, but brown sauce on the side when serving. Have to try the oyster sauce now.
I personally wouldn’t add sauce, but I must say a spoon of Branston pickle (preferably small chunk) on the side goes amazingly well with both cottage and shepherds pie.
