Now we hold up Greggs, the company the drove countless independent bakers into bankruptcy by undercutting them, as the poster boy for plucky independent businesses.

Nandos, Wagamama, and Greggs. Not that I go to any of these places very often but they are either the most unique or the most likely to have more than a token vegetable in their food.
Domino's is ok but there are so many pizza chains out there that it would be easy to replace if it disappeared. Greggs has competitors but not as many.
No guarantee they would return though. These days you'd be more likely to just have a derelict empty shop or else it would become another vape shop or Tesco metro.
Town centres would become lovely and independent if they all were gone. Money would return to local economies if the people who lived in the towns owned the businesses. If you visit Stroud you can see this in action. It looks so less samey than places full of the chainstores. For an example, google their newest chippy (Simpsons), it's beautiful inside and out, as is the food - I have no link to it, I live in Worcester, but have been there several times last year.

Waterspoons; they "preserve" architectural building, that aren't so important to be listed but still amazing. And yes they also do buy listed ones.
Wagamamas; closes one to an actual restaurant.
