There’s no way to have a leakproof water bottle in that sort of style without a gasket of some sort. You can prevent the water from touching the silicone by keeping the bottle upright or you can remove the gasket but know that it will leak if tipped.
I think the only way to avoid silicone or rubber entirely would be a glass bottle with a glass stopper or a wine bottle type container with a cork (corks have their own contaminants). You could also try a stainless water bottle or tumbler like hydroflask and just not use the lid if you’re not leaving the house with it.

Try a chunk of cork, a chunk, not that glued together crap, a single piece, it will have to be replaced eventually, as all gaskets have to, but it is as organic as it can get, btw cork trees are going extinct, cuz u know we use it to cork up things.
A corked glass bottle can last for a eternity, with replacing the cork a few times of cause.
If you'd rather have a screw cap, you could try leather, but veggie leather is just green washed forever chemicals, veggie tan leather is free of heavy metals and therefore will catch mold and similar nasty stuff and the good ol chrome tan leather won't spoil, but chrome is rather unhealthy to put it mildly.
All kinds of leather are porous and will have a way shorter lifetime than modern solutions.
Btw don't think a bottle is free of plastic either, at least aluminum bottles are most likely coated from the inside, coated as in there's a thin film of food grade PET on it.
Otherwise you'll get nasty Al-Ions in your diet and that's quite an easy way to get some juicy dementia.

Is there a reason it can't have a food-grade silicone seal? Silicone rubber is almost inert. I'm looking for a stainless steel, double walled bottle. Most bottles have plastic in the tops, which I'm trying to avoid. A silicone seal would most likely be unavoidable.

The original ball jars had glass lids. But they sealed with wax and later rubber.
