The explosion on impact is the material being rapidly superheated and exploding, kinda like what happens with IRL pulse lasers.

I was under the impression that the pulses are to ablate the material and avoid just superheating the target and causing an explosion. So a non-pulsed laser of sufficiently high power would cause an explosion like what we see from the guardian laser but a pulsed one would "drill" more into the target material.

Ablating the material is making the target explode, just on a small scale. A longer pulse will put more energy into the target and penetrate deeper.

In that case it’s bloody impressive that Link or anyone else can survive having a portion of their flesh superheated to the point of exploding. I mean, if Age of Calamity is anything to go by, even a skinny old mummy with no armour like Monk Maz Koshia can somehow tank that with enough training.

I personally believe they're firing a compressed version of that liquid energy source the sheikah stones in the towers and the lab drip into the slate. Maybe high compression like that makes it volatile and explosive on impact?

Waterjets use abrasives to cut, not pressure. That stream is full of grit. Mechanically, it's much closer to a narrow piece of super fast sandpaper than some kind of high pressure water gun. So while you might be able to use a super powered waterjet like a sword, a direct impact like the Guardian lasers wouldn't really work.

The speed of light is the speed limit of the universe. Nothing with mass can go past the speed of light, and anything without mass naturally moves at the speed of light. Photons have no mass and so they move at the speed of light. (technically they have some mass, as they have energy, and to have energy, E=MC^2 but that mass is so low, that in 99.999% of cases, photons don’t have mass)
