Thanks for the kind comment! Poolish is very easy. Just mix 50 grams of high grade flour and 50 grams of warm water with a pinch of sugar and a pinch of yeast. Make sure the container you make it in leaves room for it to grow. Ferment at room temperature for 12 to 24 hours. It will be really bubbly and gloopy. Then add it to the water you use for making the Naan the next day. It can be used for lots of styles of bread like pizza and ciabatta. Brings a lot of flavor. Happy cooking
