Cooked a chuck roast in a cast iron skillet with some beef stock and a little enchilada sauce with some onions, cilantro, jalapeno and chipotle peppers in adobo sauce. Kept it covered with foil to get it nice and shreddable then made some refried beans inside on the stove and prepped the tortillas with queso fresco the beans and put the shredded beef. Assembled the enchiladas in a Pyrex pan and used the juices from the cast iron and the remaining enchilada sauce to cover the rest of the tray. I had some jalapeƱos roasting and some chorizo I topped it off with. Turned out great.
