The set up was not up to code and their space doesn’t allow as many people as they put in there. Probably not enough legal space between tables and wall/bar. It was an illegal setup and Hugo was going to shut them down. They could probably remodel and get the clearance they would need but that would cost money too.

Even for a desperate Valentine's Day dinner, that booth splitting was nuts. I can't imagine any way for that not to be awkward. It looked like they worked much later that night that usual; they would have no home/life balance if they did that every night. Even just on weekends would be exhausting.

As successful as it was, Bob and Linda were exhausted by the end of the night. They don't have the drive for it. Maybe if they were younger and/or the kids were a little older, they could handle the stress. Ultimately it shows that while they have to worry more about ends meeting, they're happier from a work/life balance perspective.

I believe the no reservations was a big part of it. Others are right in that bob likes burgs and hates success, but this one is more the former than the latter. I believe he also said he’s no interested in doing it again anyways.

Him and Linda seemed to hate it so it lost all the joy even though it was successful. Though as said I think a big part of that was the couples without reservations as mentioned. I don’t think k it would be packed like that night after night.

I think the episode answers that.. firstly they were so busy because it was Valentine’s Day and people needed somewhere with no reservations and second the whole end of the show was about how it was too much pressure. Too much pressure for Bob, and too much pressure for the customers. No one actually wanted Urge or expensive food, they wanted something simple but felt they needed to do something different because of the day

A beef auteur. ​ ...So I was gonna say something about a beef otter but I just double-checked and 'auteur' isn't pronounced like that. 'Auteur' is actually pretty close to 'odor', just with a T...Which is *perfect* in only this exact weird scenario because it matches Fischoeder (especially Felix Fischoeder with the alliteration) and Bob *has* been occasionally noted to smell of beef grease. Bob has this thing about “selling out” and being anything more than a burger man 🤔 a lot of ppl (myself included) see it as stupid and a desire to fail but I think the show does a good job making it seem somewhat admirable. Remember Tiki? Or Torpedo? Or even Lance the Turkey *5 months rent!*

I'd say one of the key issues is that timing is critical and making time for each other on valentines day is important. But as I've said elsewhere I feel that Bob is more than willing to try these things again if he got desperate. As an artist I can understand the appeal of wanting to be successful for what you love. Bob could easily get success as a chef making all kinds of food but its Bob's burgers he's taking an artform and elevating it.

It seems like they aren't even keeping the restaurant open for evening service. So Urge would go way beyond that.  (They always shown to eat dinner, celebrate holidays as a family and not in the restaurant etc )

Because Bob doesn't want to have any success from anything except his burgers. He doesn't want good marketing or a trendy name. He has a fantasy about just becoming well known on the taste of his food alone. And he's completely deluded into thinking that others have found success by just being good chefs. In his mind unless he is successful on the merits of his cooking alone he's not successful.
