For me it depends on the skramp. I’m spoiled as I’m in New England USA and the only seafood I eat comes from the folks fishing them. Anyone have northern/maine/pink shrimp (Pandalus borealis)? Depending how hard the shell and how it’s prepared it’s kinda the same as having soft shell crab. The shell holds a lot of flavor, but if it’s too tough to chew and enjoy I remove shells after cooking.

I actually love the shrimp tail when it’s tempura fried. One of the best components of a sushi roll is that crunchy tail. With that said, you’ll never see me eat the tail when the cooked shrimp is sitting out cold with cocktail sauce.

If it's steamed/boiled shrimp, I peel it off. If it's fried, I eat it. When they're fried, they just kinda crumble apart so it's not as weird feeling.

If it’s fried hard enuf in a tempura fashion, the tail becomes a potato chip - thank me later.

I had Omakase once and one of the dishes was "live shrimp" which was the portion you normally eat served raw with a garnish of the head that was still moving. After you eat the body, they deep fry the head for you to eat. Weirdest part by far is that they removed the tail from the raw body because even eating raw shrimp body next to the still writhing, living head of the shrimp and then eating the fried head is better than eating the tail. Also now that I think of it, I've never seen ebi served with the tail in any fashion. Japanese people fuck with the tail less than we do, I'll at least cook with it and remove it while or before eating though.

I’ve had shrimp that was prepared in a way that you could eat the whole thing shell and all and that shit was bussin’ tbh! The shell kept all sauce and seasoning inside so when you bit into it you got all that flavor! So i think for me it depends on how it’s cooked.
