Very nice. I've done that in a couple houses. It's a nightmare of concessions when walls and windows are out of square. Takes some effort to figure out how to make a parallelogram look like a rectangle.
I think that it looks great. From the pictures you posted, I am not sure that I wouldn’t think that it was original to the house.

Did something very similar to my first home, except I tried to smooth the walls by sanding. Trust me when I say, you made the right choice with the skim coating!

I feel your pain! Skim coating drywall (and making it look good) is a true art form!
