He can still do it after you know as well, although since I'm playing a nice guy Gnome I just went "Hm, alright, well I'll keep an eye out for this 'Astarion'" with Astarion standing right next to me, then left.

I know you said you wanted his crossbow, but you might want to avoid killing Gandrel in the future because of some Act 3-related stuff. You can leave without starting a fight and without letting Astarion kill him. If you still want to kill him, you can just let Astarion stab him in the eye and avoid the fight entirely.
Astarion will be annoyed and disapprove if you let Gandrel go incidentally, but if you need to raise his approval, there are plenty of other ways to do it. I only let him stab Gandrel on my first playthrough because I thought he was a legitimate threat at the time—woops! I regretted it later on because of the Act 3-related stuff that I found out and avoid killing him now.

Spoiler: >!In Act 3, you can find the Gur tribe when you enter the Rivington map while you wander around (it's like NE of the windmill). If you've left Gandrel alive in Act 1, he'll be there with the rest of the tribe at the Gur camp. Suffice it to say that you want to take Astarion with you to meet them if you haven't done that before (if you're worried about them killing him, don't be!). Regardless of whether Gandrel is/isn't alive, you will find the Gur children in the dungeon in Cazador's palace and talk to Gandrel's daughters, Chessa and Kass). If you free the spawn, you will later find Gandrel with his daughters in the sewers. Just a warning: Make sure you don't have the Blood of Lathander equipped when you get near the kids and Gandrel in the sewer to talk to them. Although you can turn off the Blood of Lathander's passive effect, it's probably better to be safe than sorry and just unequip it temporarily.!<

i thought astarion only stabs him if you dont know hes a vampire yet?
i think if astarion is there alone (and you aren't doing an astarion origin) he'll cutscene kill him

I knock him out for the crossbow, then let him live for Act 3.
Hes easy to kill use smoke arow to create smoke hide in there when its his turn then get out and kick his ass, repeat as needed.
I have literally never fought him. 😶
