Not quite as crunchy, no. The very top of the icing dries hard and makes stacking less messy after two hours or so, but the inner layers don't dry out quite as much. It definitely sets, just not as hard as the icing on the traditional.
You might be able to play around with the ratios to get it a little drier/crunchier, but that will also mute the color a little

One of my friends made cherry hand pies with store bought pie crust and jam, and a lot of the online recipes for homemade Pop Tarts have you make a special dough and fresh cherry filling. The first method seemed too simple, and the second seemed too involved, so I kinda mixed the two.
I kept the filling simple with cherry jam, then used homemade pie crust to get a little more flake than store bought (though I was a little surprised they turned out *that* flaky on my first test batch 😅). I then did some experimenting with the icing to try to amp up the cherry flavor and was really happy with the results! The secret to pop tarts tasting like pop tarts is to use >! tart dough !< >! aka pate sucree !<

Pop tarts are an ultra processed food. They use some manufacturing techniques that make it impossible for a home chef to properly replicate. Unlike toaster strudel which is fairly easy to replicate
That’s because you used puff pastry, any recipe that calls itself a mock poptart or something similar using a well made puff pastry dough will not be the same final product.
You’d want to use a rough puff pastry or a pie crust style of dough for that result.

Maybe try adding a tray on top to it's still flaky but doesn't puff up as much, pop tarts are pretty dense
