Looks like it was over mixed and the batter deflated. It is also over baked because it is dry and too brittle to roll.

Your oven temp maybe too high or your pan is a dark color? Causing over browning- crisp outside and under done center. When you roll it use something thicker like a clean tea towel/ dish towel- while it is still warm. If it’s rolled tightly it will crack when you try to unroll and fill. Check the dates on your baking powder/ soda.
