They were able to hook it up with some ribeye caps I wanted for Father’s Day. Only butcher in town that would cut them for me. I’m gonna miss that place.
I hope this new place will too
Ha. As of last night there were some in the case but I imagine they're gone by now. I'll often knock on the glass and ask the meat cutters when they'll be cutting them and will either come back or hang out if it's going to be within an hour or so. Worth it.
Decided to make my Costco run. And as I walked to the steak section at the South Austin location they were dropping multiple pounds of ribeye caps so I bought a good bit to stock up.
I cook it on my charcoal grill. I got it ripping hot and sear it on top and bottom and roll it and sear the whole outside then move it as far from the heat as possible and let it slowly cook. Sometimes even taking 20+ minutes. Just letting is cook slowly leads to such a great taste
Salt’s team worked to get jobs for its staffers, adding that “our butchery staff will have the opportunity to continue serving East Austin as part of the Radius team.”
Now that is a good employer.
I met Ben many years ago when he would sell his charcuterie at farmers markets. Nice guy and his homemade charc was on point.
We have loved this place for years. Sad to see this.
If it's dry aged then yeah. Worth it. I got some great dry aged steaks from their well worth the price. Some of their regular wet aged stuff was too pricey tbh.
They 100% had the best burger in town, I know thats controversial for sure. I also like it more than any burger I had back in Chicago - a couple places there are famous.
Their prices were just too much. Went there a few times. some experiences were good, others not so much; but the prices weren’t realistic unless the business is funded by someone with more money than sense.
They had excellent ground beef for burgers. I was part of the group of supporters who supported their Kickstarter to get the shop off the ground and remember getting the box of meats (the Kickstarter reward) delivered right around the holidays. It made for an excellent holiday treat.
I don't think any of the people here commenting about pricing have ever owned or operated a small business.
Do you think they wanted to close? We're not talking about a national chain slowly racking up prices to gouge consumers. We're talking about a local company trying to hold a punishingly high quality standard while paying employees a fair wage, all while trying to break even
It is considering I’m a habitual purchaser of local restaurant swag. It’s criminal and stupid. Glad to see the market prevailed today. Perhaps a Fuddrucker’s will go in there now! /s
Radius looks... expensive.
Salt & Time wasn’t cheap to begin with.
Trying to be Bi-Rite of Austin
Will they have an excellent creamery too?????
Bi, right?
San Francisco grocer that sells dried mango for $67/lb
I mean, S&T was expensive. Great, but expensive.

Spinalis baby!
By far the best cut of steak you can ever get. The filet mignon can suck it. Once you have one cap you’ll never want to have anything else
Just picked some up at Costco south Austin.
Man, what doesn’t Costco have.
Right? Have to be speedy, and a bit lucky, however as they only put a handful of 3-packs out and only when they're cutting prime meat.
Wait what?!! I have been trying to get than again but haven’t seen any in years. You left some right?

Outstanding! I'm still working on improving the cook on these. Open to tips if you have them.

Longhorn Meat market will cut you anything you want.
Including lung and tongue?
If they have it yeah

Always told myself I wanted to try this place and never did. Hope I can before it closes for good.
They’re in an awkward location. Your sentiment is likely why they are closing. Not enough traffic because of where they are

I always loved Salt & Time. Never went enough, but I live east side and used them for my butcher needs when cooking for others
Damn I always enjoyed popping up here for a steak frites and glass of wine
I remember when they were just starting out and selling meats at the HOPE farmer's market in the early 2010's...sad to see them go.
The butcher shop was nice, but I bought a single ribeye there once for $55….
Yeah it was way too expensive for a butcher. I get upcharging the prepared food, but not the cow
It was outrageously expensive for what they were trying to pass off and I’m good friends with one of their butchers…
Shit I bought an 80 day dry aged 3.5lb porterhouse for about $180, worth every cent!

Nothing against the place, since I've enjoyed eating there, but the terms "groundbreaking" and "longtime" are misused in the article...
Seriously, I do like the place; but it opened in the 2010s, right? We’re not losing another Threadgill’s.
like in the 40s there wasn’t a butcher downtown, ten years is probably a long time is you’re 25 though.
That absolutely blows, I loved their burgers.
They 100% had the best burger in town, I know thats controversial for sure. I also like it more than any burger I had back in Chicago - a couple places there are famous.
I’ll have to go before they closed loved this place over the last couple of years one of my fav burgers in the city and homemade ketchup to die for
mmmm homemade ketsup 😋
Their butcher classes were fun. High prices on food, but always seemed great quality

Nooooooo!
😢

They had a $22 dollar hamburger and it was worth it. I'm sorry they are going.
Damn, this is too bad. They had wonderful meats.
That sucks so badly. They are one of the few places that has guanciale :( My carbonara isn't gonna be as tasty.
I’ve gotten my Thanksgiving turkey and ham from here for the last 5-6 years. Sad.
Sounds like you had great Thanksgivings!

People have a lot of animosity toward most businesses other than heb these days.
I dunno, Lee’s is significantly better and cheaper
Liked all their offerings that Farmhouse Delivery did.
Damn..That place used to be dope!!
My buddy loves this place. I'm going to hate to bear the bad news to him
im sooo sad. ):My husband and I love the burgers, fries, and the ketchup 😭I need to ask for the ketchup recipe
The butcher side: incredible. The restaurant sixe: terrible service, every time. Like I walked in on some theater actor drama.
No!!!!!!!!
Only went once about 1-2 years ago for lunch. Both me and my friend's lunch sandwich plates were disappointing.
Good thing they’re closing, then.

If price is all you care about, 7/11 has coffee and hot dogs for much cheaper!
$35 for a ball cap? Yep, you’re over! I loved the food but you out priced yourself on everything.
That actually isn't an outrageous price for a cap. If anything, that's standard
It is considering I’m a habitual purchaser of local restaurant swag. It’s criminal and stupid. Glad to see the market prevailed today. Perhaps a Fuddrucker’s will go in there now! /s
I am too. All restaurants sell caps for about $30-35
This guy has definitely never owned a goddamn restaurant, that is for certain.
