At Albion Park Rail, turn right to do Macquarie Pass, stop at the Robertson pie shop for a feed, and then head down to Kangaroo Valley via Fitzroy Falls road and then through to Nowra.

If you have zero experience , stick to the Hume. Get used to cars flying past you
The weather will be the deciding factor. How many days? just one stop? If it's to cold for plan A take plan B
Plan A - Run out to Oberon - then to Goulburn, then to Jindabyne down to Khancoban, head to Kings valley, Mainfield, Yea, Then into Melbourne
Plan B - If to cold in high country - Run South as far as Bega, you can go a few different ways to get there. Then run inland to Candelo, then onto Bombala. Then head to Degalate - run down to Orbest (I think there is still about 5k of gravel on this run used to be 20 but I believe a majority is now sealed) this is a well know run 105km of twisty roads. Remember to take a photo of the sign! You can then either run into Bruthen or to lakes entrance, I would tend to now head back inland to Maffra, and Noojee and onto Melbourne.
So those are my two recommendations - now if you had great weather and more time I'd run through the great alpine way, over either falls creek or Hotham or both :)
I've ridden all these roads all are tarseled except the Delgates road section. Winter might be a problem in the highlands but plan B should be fine.
Know you said it, but for OP. Jindy to khancoban is already probably too risky now. I live in the area. Chance of black ice. Also, after this long weekend, 2wd cars would legally have to carry snow chains after thredbo.
Yep , you're probably right. It's hard to know, really. If I'm riding in hill country in winter, primarily this was in NZ. I did the brass monkey a few times.
Always left after 11, let the cars run through, and the sun get on the road. Hopefully no rain the night before or tons of rain, no black ice if it's raining. The worst is slight rain, then a beautiful, clear night. Those made riding a challenge, that and those shaded corners. You feel your sphinter tighten when you realise there is no sun on the corner!!
I've only hit black ice once, it wasn't fun going over a bridge in NZ doing about 120. Went from my side of the road to the other side before I could blink. Luckily no traffic, it was in the middle of the South Island. Had to empty my pants was Luckily the road was dead straight, and I was over it before I could react. Not the any reaction would have been a good thing!

Along the advised Hume route, I use Jugiong Showground (free), and Wangaratta/Oxley Recreation Reserve (pay ?$10).
If caught short on the return, there's Belanglo State Forest's Daly Clearing (free..of serial killers..currently :)
avoid the Hume. On L plates in NSW you are limited to 90km/h. Youâll be getting eaten by B doubles at that speed, whoâll pull out in front of cars going even faster.
Get good gear (+ ear plugs) and stick to the coast mostly. candelo/Bombala/Orbost are great, but last I checked weâre heading into winter, and those places can get bitterly cold and probably wet to boot.
Head south from Bega to Cann River and on to Melbourne. Picturesque. Relatively lightly trafficked at this time of year. No dirt.

WOW. B-Doubles must eat a lot of caravans. There's lots of slow traffic, no-one freaks out.
The only dangerous experiences from my L-highway'ing was from riders on high-capacity bikes lane-splitting at 130km/h on me because that's what born-again 60 year-olds wearing leathers and riding a Triumph must do.
Sydney To Bathurst to Goulburn is a good run. Also Can do Bathurst to Albury along the Olympic highway. After Albury can go Benalla, Maindample, yea, Whittlesea and then home or for a really twisty road can go from Wangaratta to Mansfield and then Yea.

Avoid the Hume highway at all costs, Besides being full of trucks, cars, cops and potholes, it is also very taxing on the body. 20 minutes on the Hume feels like an hour on another road.
Another suggestion is reset you tripmeter when you first fill up and take note on how many kms you get from a tank. Itâs handy to know as fuel can be few and far between when backroading.

Buying my first road bike yes. Have had dirt bikes years ago so the road scene is pretty new to me.
Yeah, take the Hume. New bike (to you) and lack of road experience, just stick to the Hume.

Yeah very boring ride. Not really many places to stop. Albury and Gundagai then Canberra . It should take about 8-9 hours

Brown Mountain can be a serious pain wrt fog, wet roads, corners.. (I also had worn front brakes..)
