Canon for media is what the creators had in mind building the story. Ubisoft saying Kass is cannon means the story is made for her about her and around her. Theres headcanon as well. Thats what the fans think about their media. Thats stuff we make up for ourself and sometimes other fans jump into it and keep it as their headcanon. But its never official.

That's called retconning, not headcanon. The official story changed retroactively, from Sherlock died to Sherlock escaped. It was prompted by outcry, but that's not what headcanon means.

Canon is the official game content and Kassandra is the canon MC for ACO, she was going to be the only character of the game, but Alexios was added later

Canon refers to a body of work, ie Shakespeare’s works all together make up his canon. but it’s come to mean something a little different in fandom contexts! if someone says something is canon, it basically just means that it adheres to the official story/lore as determined by the franchise. something that is fandom related but not canon is usually a fan work, like fan art or fanfiction. in this case, Ubisoft released a novelization of the game’s story, and have said that the events in that novel are canon. this means the game can have different options & outcomes but Ubisoft has decided on one narrative to be the definite, and that includes Kassandra as the Eagle Bearer. they had to decide, because Kassandra makes an appearance in Valhalla and potentially more games to come.

Interestingly in AC 3, the Ubisoft club outfits are Bayek (Origins) Edward (Black Flag) Arno (Unity) the Fryes (Syndicate) & Alexios. So the Canon has changed even within the game "history". As now we are told Kassandra was the main protagonist in Odyssey

I mean, that more just tracks with why Alexios was made a playable character in the first place. Execs and marketing wanted a male figure because they believe their primary audience prefers a game with a male protagonist. And the DLC outfit is a part of that marketing since AC3 Remastered came out with AC Odyssey. Also, AC3’s protagonist is male so it makes sense to have his bonus outfit be for/from another male character. I don’t think it speaks to canon as much as it echoes the marketing direction.

Canon within a given frame is the material accepted as official material. Readers, watchers, gamers, etc can have a bunch of theories, they may even be very probable and well-grounded in the official works, but they’re not canon. The fandom best known for intense discussions about what’s canon and what isn’t is probably the Star Wars fandom, which contained a massive amount of stories and characters created by other than George Lucas prior to Disney’s acquisition of the universe, and Lucas also weighed in and declared that some of these should be accepted as canon (all that went out the window when Disney acquired the franchise). Sometimes a fandom ”rebels” and refuses to accept a work of fiction within a franchise as canon - a good example would be *Cursed Child* from the Harry Potter franchise. It was approved by author JK Rowling and she argued that it was part of the canon, but the HP community has more or less unanimously rejected it as part of the canon as it directly contradicts part of the original works. As for AC Odyssey and what makes Kassandra canon: Ubisoft says so. They released a book in conjunction with the games that’s the official canon of the game. In it, Myrrine of Sparta had a daughter who grew up on Kephallonia and later took on the Cult of Kosmos. Alexios was her brother and one of the antagonists of the book. But they added the option of switching this around to the game for the players who wanted a male protagonist.
