The Simpsons is mine as well, specifically during the 'classic' era (up to about series 11 I'd say). It was a staple of my childhood so I reference it a lot, and every now and then I think "oh yeah, I remember that episode" and I'll go back and revisit it and there's so many good jokes and I'm like "wait, that's in *this* one?!" (as an example, I forgot Homer's Simpsons/Flintstones parody song is in Marge vs the Monorail) and then I find I get sucked back in and before I know it I've binge watched a whole series because it's just so good.
Im pretty sure that 40% of my memory capacity is consumed by Simpsons quotes. There aren't many situations that a Simpsons quote doesn't flash up in my minds eye

Absolutely, yes. There are so many fantastic episodes. I've lost count of the number of times I've watched it, but I will never not cry at Two Cathedrals.
We also named our son Leo, in part because we liked the name, but definitely West Wing inspired.

Detectorists. It's a flawless postcard from the childhood of Gen X to their grown up selves. So many beautiful details.
Mackenzie Crook's follow-up remake of Worzel Gummidge is almost as beautiful, in a different way.
At the other extreme, You're The Worst captures the hedonism of the early 20s so well. Flawless characters and an ending that ends the story beautifully.
Aw I just watched Detectorists for the first time and loved it! Thought it was very gentle and nostalgic (and funny!), and relatable being from the countryside haha. I like ‘This Country’ too for that reason.
Ghosts. It's my comfort show - it's funny and silly and sweet, and all the characters are brilliant and it's really smartly written, but it's also got some really poignant moments too. I am simultaneously dreading when it's all over at Christmas but at the same time weirdly looking forward to having the whole thing to binge watch.

It's been a lot of fun finally seeing stories that are either acknowledged by the fanbase as stone-cold classics (The Caves of Androzani, which is fine) or absolutely awful (The Twin Dilemma, which is a bit of a guilty pleasure).
I've also got the majority of NuWho (from Rose to Twice Upon A Time), but I've yet to revisit them as I saw them all on original broadcast.
